I use Paulthebread's Christmas loaf recipe.
Completely foolproof
Sounds good, WW. Can you post the recipe or a link to it? Thanks
I can't find it online, but this is it
200g white bread flour
1 tbsp sugar
100g dried fruit
25g candied peel
25g chopped nuts
1 dsp fresh yeast
125ml warm water
3 tbsp olive oil
whatever spices you fancy, I usually use mixed spice and nutmeg
Basically, throw it all in the bread machine on a dough programme.
When it's finished, give it a quick knead and drop into a 1lb loaf tin for its second rise.
Bake for 25 mins at 175deg fan.
The recipe says to roll the dough into a 20cm circle and place a rope of marzipan down the middle, then fold it over and leave to rise. Sometimes I add marzipan, other times I do it as a tin loaf.
Glaze with sugar water after baking if you like.

Re: What are you baking this week?
It's at times like these I wish I had a bread machine........
Re: What are you baking this week?
My overbaked hot cross buns taste fine!
The simnel cake is fine and wrapped and "maturing", waiting for the marzipan topping on Saturday or Sunday.
The over-fruited teacakes held together
and look OK, but tasting will wait a couple of days until the HCBs are used up...

WW, I see you use fresh yeast.... I presume this works OK in the bread machine ? I have always used the instant sachets, whatever bread recipe I use and just sprinkle this on the flour ...
I see there is no eggs or milk this version so good for vegans

Re: What are you baking this week?
Actually I disobeyed the recipe and used dried yeast, although I have used fresh successfully in the bread machine.
I just crumbled it in and it worked fine.
I seem to remember Paul is vegan, so that would account for the ingredients.

Re: What are you baking this week?
I've made Paul's recipe at Christmas ( without a bread maker). Very good indeed but I've never had much luck with the marzipan sausage down the middle. It always seems to stay separate from the dough when cooked.
Re: What are you baking this week?
When I make a stollen with marzipan in the middle, I have given up on the one big bit down the middle and made three thinner lengths and rolled them in as you would if you were making a chelsea bun. That way you get more chance of a bit of marzipan in a mouthful rather than getting it all at once in one mouthful.
There is also Dan Lepard's Stollen Bars, which are very nice and not too filling!!

Re: What are you baking this week?
Yes, that would work better I think, aero. I've made the Dan Lepperd recipe (I think you shared it before) and agree it is to be recommended .
Re: What are you baking this week?
Indeed, I believe that I did share it, but it must have been years ago on the Wildfood board. I usually make it to take to the grandchildren after Christmas.

Thanks for posting that, WW, I'll have to try it soon.
Re: What are you baking this week?
A dozen (in all) hot cross buns. Paul Hollywood recipe which includes chopped apple as well as the usual sultanas and mixed peel. All ready for breakfast tomorrow...
A little dark on the outside, probably due to the milk wash.

Re: What are you baking this week?
some of the batch i made yesterday are that colour, aero - and i forgot to glaze with apricot jam.
this batch were mathematical symbols (and a pair of +!+$...) rather than naughts and crosses - although i suppose two, sort of, had crosses.

Re: What are you baking this week?
I thought that i had some apricot jam for the gaze, but I couldn't find it, so I used the end of the jar of gooseberry preserve...

Re: What are you baking this week?
My kids made a chocolate and vanilla marble cake yesterday. It looks frightful but actually tastes pretty good. They are delighted with themselves (and the cake )
Re: What are you baking this week?
it looks (and obviously tastes) better than the meal our kids cooked for us when they were little - then handed us the bill...
it also looks better than the last cake my partner made which was microwaved (admittedly accidentally - i hope) for half an hour.

Re: What are you baking this week?
I am wondering what would happen to a cake microwaved for half an hour
This cake does taste good, but I had to stop myself from making it look neater!

Re: What are you baking this week?
Simnel cake is done. But I still haven't got used to the grill in the oven, and the browning of the top is a little bit over. But otherwise OK.
Bread rolls are proving.

I didn't pick up that the chocolate cake was done by offspring! Looks fine to me!
