Did you follow a recipe for your Oxtail stew WW

For the patty I boiled potatoes and parsnips, mashed them with seasoning and horseradish sauce.
Then shaped them into discs and fried them until hot and crispy.
They are pretty good with a poached or fried egg too.

after starting to sort through and rationalise the work/storage space in the pantry i have found the odd jars of peanut butter that need using - so it's spicy peanut soup for dinner tonight - and i need to make some more bread.

Yesterday we had simple baked salmon with Cajun spiced sweet potato chunks and a chopped salad. Tonight it's Thai green chicken curry with rice and salad.

I made a potato gratin with creme fraiche, peas, faux bacon and emmental. It was not great though. Wrong sort of potato.

I made a sort of Italian American chicken cacciatore in the Instant Pot. Not bad, slowly getting the hang of the beast, can’t quite get used to how little liquid is required in something that seals properly

Which model IP do you have Sue ?
There is a FB group devoted to 'Instant Potters' (instant Pot UK Community) with lots of enthusiasts and experts.
I am still using the one that PP got for me from CostCo (when I was recovering from my operation iirc ) It's quite elderly now and superseded by bigger and better models ... I am tempted to get one that does Sous Vide
Edited to add I used my IP to cook neck of lamb (and lamb heart ) stew the other day ...

I sort of followed a recipe from the internet, I think it would actually have worked better in slow cooker mode rather than pressure mode, the flavour and the chicken would have been much the same, the texture of the veg would have been better, there are a lot of mushrooms and peppers in a cacciatore

Easy one yesterday of savoury mince from the freezer mixed with pasta shells and grated cheddar. Cheese burgers tonight with salad and air fried sweet potato chips, might make a sprout slaw as well.

I softened some chopped spring onions and garlic in a good slug of olive oil then stirred it through spaghetti.
Then added pepper, parsley and a spoonful of creme fraiche.
Served with a glass of kiwi sauvignon blanc.
10 minutes and delicious.

I had a second portion of the chicken cacciatore, much nicer now it has mellowed
I decided to try making polenta to go with it, I have eaten and enjoyed polenta in Italy but homemade hasn’t worked so well Tonight’s was good, actually made with Dunn’s River fine cornmeal, no great secret just used more water and cooked very slowly for much longer than I usually do - after about 25 minutes the texture suddenly changed and it was silky and delicious, added a little butter and Parmesan. Actually there is a secret - the recipe I followed said to do most of the cooking under a lid, which was news to me

Lunch was one of those unexpectedly successful meals!
We had some wholemeal pittas to use up and some rocket.
I made rocket pesto and instead of chucking it all together I observed the quantities specified in my recipe and bothered to toast the pine nuts first ... inside the warmed pittas with a lot of cottage cheese and some delicious baby tomatoes - heaven! We couldn't believe how incredibly moreish it was. (And couldn't have been more of a contrast to yesterday's inedible leek and potato soup with the weird duck stock I mentioned on the waste not thread )
Tonight we've got an Asda pulled pork roast I got if we needed it over Christmas - but as it came with a 24th Dec date I had to freeze it - so we're creating some space in the freezer by having it tonight, probably with some mashed potatoes as I've still got a load of Christmas potatoes left. Or we might do a Dauphinoise.

I've never coveted an IP, but now I see there are 'multi function' ones. Suddenly, I want one!

Tonight was Thomasina Miers' Catalan fish stew.
I usually dislike fish with tomato but this is the exception, it was requested by J a couple of weeks ago so he finally got it today.
Minor crisis when I went to the excellent fishmonger on Friday.
Closed until 13Jan.
Humph.
How very dare they.
Had to text J to drop into Morrison's on the way home.
Most of the Tesco and Sainsbury's round here have closed their fish and meat counters, apart from Ashby de la Zouch for some reason.
Anyway, I prefer Morrison's for fish.
Served with HM faux ciabatta.

I’ve just made a lovely vegan ‘beef’ and broccoli Chinese-style dish with fried rice. Was really tasty but unfortunately the handle fell off our large frying pan when my OH was washing up. It was welded on rather than riveted so looks like we’ll be taking a trip to IKEA soon.
