Really nice, the mint made it very fresh tasting.
I served it just with a mixed salad.

Yesterday I made a pasta recipe I often make, loosely based on Marlena Spieler's Orzo with Greek Island Flavours - the flavours were garlic, spring onion, chopped tomato, spinach (frozen), evoo, feta, allspice, dill

Yesterday must have been chilli day Sue - we had Giada's white chicken chilli which we love. We were due to have ribeye steak and risotto on Saturday but were shattered so had a Chinese takeaway instead. So that will be tonight. A bit better than a usual Monday!
Not much cooking the last few weeks as I was in Kazakhstan. The food was much better than I expected. Lots of interesting salads (with beetroot etc), some really delicious breads and a couple of horse dishes that were genuinely delicious - there was one called 'five fingers' where the horse is simmered in broth for hours and then noodles are cooked in the broth. Sounds a bit grim but wasn't.

Sounding good everyone, I do like the sound of that roast SG.
Yesterday I had an experiment using mayonnaise as a marinade for chicken to make a "KFC" style dish though the chicken was baked rather than fried, We had the chicken with a baked spud, roasted peppers, corn cobette and some "Southern Fried" gravy (a packet mix).

It really was, Rocky! It's been on the menu for a good few years and is def a keeper.
I used to cut out recipes from mags and have a thick file of them. It's as comforting to look back through them, as it is to cook the food!! Nowadays, I just 'bookmark' them, but then they get lost in huge lists of links.
I like the sound of that chilli!
Tonight I'm making Sticky sweet and sour plums and sausages from Ottolenghi's Test kitchen (in the Waitrose mag!)

It was obviously both chilli and corn cob day, I ended up with enough chilli to feed the whole board and made a small avocado salad and a corn cob

One of my friends said she'd made an incredibly successful chicken tray bake with mayonnaise, I wonder if it was the same as yours? I have a feeling she didn't put breadcrumbs on it but she definitely marinated it in mayo + other stuff.

The steak went into the freezer and we had linguine with sprouts and pancetta which is a favourite. We had a power cut the other night and have discovered it has knocked our oven out so, of course, everything I fancy cooking / eating needs to be oven cooked
Perhaps something simple like a Thai chicken curry…

I revisited an old Ainsley Harriott favourite last night that I've not made since the boys were at school! Sausage meat, cranberry & spring onion patties with a bbq type sauce with baked potato wedges. It was a good as I remembered. We had carrots & green beans with it.

Have you tried pushing in both buttons on the oven clock and holding for 10seconds? Usually works in holiday lets

A nice simple one for us last night - stuffed pasta with chorizo, tomato sauce and pesto. I'm home alone tonight so have a slice of chicken & mushroom pie defrosting to have with a leftover baked spud and veg.

Really lovely sounding stuff!
We have been eating various soups, chilli, curry, ragu etc from the freezer recently.
Last night we had sausages with butternut squash, sage and fennel, and roasted caramelised red onions topped with parmesan.
Tonight we're having prawn linguini with a hint of chilli in there too.
Lamb kleftiko tomorrow with salad and potatoes, oregano and lemon. We may draw straws for who gets the leftovers for lunch on Friday

There was pork mince rtc in the shop yesterday so I made. Stir fry with that, lots of veg in a sort of ginger and lemongrass sauce.
OH is out tonight. What I have will depend on the oven. If it isn’t fixed I’ll have salmon with vegetables and noodles.

I had rtc venison steak last night. I adore venison and it didn't disappoint. I just had it with sauteed veg to which garlic and soy sauce had been added and it was lovely. I usually casserole it with port and juniper berries but usually have much cheaper cuts!
Rtc cod loin today with a nut crust. Honestly, I can't remember last time I had meat or fish (with the exception of prawns) that wasn't rtc and its always lovely.
