Not had pud at Wahaca, but goes with the street food vibe
I love the way that they recommend you get sides to share (or did pre-Covid) but if that doesn’t suit you can have a row of small portions down the side of your plate

I keep brown sugar double bagged in the freezer and take it out 5 or 10 minutes before I need to use it to soften and unfreeze. I keep it in its original plastic bag, clipped or elastic band-ed airtight-closed and put that into a zippered plastic bag - same as large bags of yeast. Never dries out.

A quick spin in the microwave softens it up too ..

... hard brown sugar ...
I do the microwave thing too: a minute, test, repeat.
I made the mistake of decanting mine into glass jars, whilst the bit left over still in the bag it came in is still perfectly soft. Must be the condensation thing with heat fluctuations in glass.

I keep all my different sugars in plastic containers - never had any problems with them going hard at all.

I inherited a big Tupperware box from my mum, all the baking things like a couple of kinds of brown sugar are in it in their original packets, they seem to keep rather well like that, they are seldom used

I always used to get medium eggs as a matter of course but since I've been online shopping have been getting large ones; at the beginning of lockdowns for some reason it was easier to get large ones and so we got into the habit of it.

Personally, I think eggs have got smaller (and not just a thing that looked bigger to a child). The ones sold as large I'm sure are the same size as what once was medium and extra large what was once large. I'm sure several of our board members will give me facts to prove me wrong but I'm sticking to my opinion . I've no objection to mixed boxes as long as they are a fair mix.
Re: Foodies In The News
I agree about mixed boxes, EM, but they seem not to be as easily available/good value on Asda online. I also used to get them when I actually saw them in the supernarket. As I recall, M & S used to do quite a good value box of, was, 15? or 10? Can't remember, it's been so long since I've actually been there.

Ocado sells M&S mixed free range eggs - £2 for 15. https://www.ocado.com/products/m-s-free ... -511297011
I got some a few weeks ago and they were very good value - nothing too small.

The thing the article doesn’t point out is that the size categories have changed as we aligned with the EU but as they are sized by weight the only way they might seem smaller is if you were buying size 2 or 3 and converted to medium - here’s a conversion chart
https://www.egginfo.co.uk/egg-facts-and ... /egg-sizes
My mother and I have always made basic sponge cake by weighing the eggs as we used to get random sized eggs and my experience doing this is that 3 eggs are now the same or slightly heavier than they were 50+ years ago
I often buy random weight eggs from the greengrocer but I’ve not seen many in supermarkets

Re: Foodies In The News
Thank you Sue. I'd forgotten about the old gradings. That makes sense. When I was growing up we collected them from a farm so even if they were graded back then I wouldn't have known but they always seemed at least medium/large in a mixed tray and fitted snugly in egg cups. I do wonder, if they weren't labelled, if people would know unless the eggs were very small or very large.
They have mixed size boxes of eggs in Sainsburys and Waitrose for sure.
