What to do with these ..... ?
I have just received daughter's second Christmas Present ...
Gawd, A lovely thought, but what on earth do I do with all these ? Enough fungus for a family of 4+ never mind a single person eating alone.

Well, wild mushroom stroganoff certainly springs to mind. Mushroom risotto, mushroom soup (you could freeze that). You could preserve some if you have time? (see below for example):

The company who supplied them also have a website with recipes, so I will look there first.
Coincidentally, Marco Pierre White, who is punting an online vegetarian cooking course with the BBC and with a pullout in last Saturday's Mail, has a recipe for 'Meaty Pappardelle' with Ragu of mushrooms, using King Oyster mushrooms as the pappardelle, and other mushrooms for the ragu ...
MPW also cooks a couple of his veggie recipes Sous Vide ...

I think Kacey makes a mushroom ragu but I can't remember whose recipe she bases it on.

i think you would easily be able to use them quite quickly - they'll shrink down quite a lot with cooking.

I have up to 4 days to deal with them ... but I already have mushrooms in the fridge that need to be eaten too ... ... I will attempt to freeze some of them after a briefly frying them and even try dry them, but will have to use the oven as I don't have a dehydrator.

I find that they dry in the fridge if kept in an open box/tray. Some paper towel below can help as well.

Do you have a air fryer Patsy or a similar function on your multi pot. At the lowest setting it pretty much works like a dehydrator just keep an eye. DS2 dried mushrooms in his air fryer after buying a huge pack on reduced to clear and it worked really well.

Gill DS2 got a decent result. His air fryer has a lowest temp of 80C and that was fine. Well worth trying with some strawberries though they're a bit wetter than mushrooms so not sure how long they'd take.

maybe cut them in quarters?
most of the dried strawberries you can buy are freeze dried, aren't they - i would try some of them open frozen if i were you - mind you they would be gone too quick for trying to dry them!

I only have the basic Instant Pot; same as PP - before they invented all the different combinations ....

That's exactly the recipe I use for the mushroom ragu. It really is unbeatable. The ragu is brilliant added to pasta, used as a vegetarian shepherds pie base, lasagne filing with extra tomatoes, add a bit of dill and nutmeg and it works well in a veggie moussaka. I've even added Moroccan/Tunisian style spices and used it in filo pastry to make a vegetarian borek.

I'm thinking Mushroom Stroganoff and the mushroom steamed pudding Gary Rhodes did for Christmas one year - which I think could be made with a variety of mushrooms. I haven't a T&T recipe for either (the stroganoff recipe I have is very vegan and would not be to everyone's taste) but there are examples below.

I have a craving for really buttery mushrooms on toast now!
I tried the king oyster mushrooms from Ocado a while back, only got one or 2 for quite a lot of money. Sliced into flat pieces they shrunk like all mushrooms do when cooked.
Probably because I like mushrooms really overcooked until they are quite dried out & incredibly intense in flavour they wouldn't last me very long........
What a lovely gift for a foodie.
