My go to method for sea bass us to bake it ‘en papillote’ with whatever aromatics are to hand, usually something like dill and lemon, or Mediterranean herbs and sundried toms etc, or something more ‘Asian’ with star anise and soy or similar.

You'll have had it by now but just for the thread. Waitrose do several types of ready stuffed sea bass. Very expensive but I buy it if reduced to clear because I adore it.
My favourite is 'Slow roasted tomatoes with Kalamanta olives'. It is a sort of tapenade of tomatoes and olives with basil, garlic, red pepper and olive oil.
The other one I like is ginger, coriander and lime. A paste made of these with a little chilli and garlic and oil.
I haven't yet tried to replicate either but feel that anyone who understands flavours would be able to do something similar.

Years ago I used to go down to Billingsgate early on a Saturday morning with a colleague from w***. We'd get orders from others on the Friday and deliver some fish as we came back. We charged them what we'd paid, a service rather than a business.
I'd always buy a bass for us, which was always steamed with ginger and spring onions that evening as the centrepiece of a Chinese meal. Obviously it can also be done en papillote with the same seasoning and a splash of soy.

Snap EM. Our M&S Food does the same but they also use various other fish this way and I always buy it if it's RTC.

I love sea bass , I think it’s probably my favourite fish . I like it with thinly sliced fennel and cooked potatoes with garlic and a good glut of olive oil then baked
