Yet another weekend home alone, as wife and middle son are still stuck in the UK, with little hope of getting back here within the next month or so
So I pulled out the pasta machine, took absolutely ages to decide what to make, but eventually settled on these, which are called Anolini. I stuffed them with ricotta and spinach and served them with a garlic/butter/ chile sauce.
Now you might wonder what on earth possessed me to make anolini. Simple. I only had a round pasta cutter

If anyone is looking for a slightly different roast chicken and potatoes recipe I can thoroughly recommend this https://www.theguardian.com/food/2020/s ... iso-butter . I cooked it yesterday and it was delicious. I reckon it would work equally well with chicken thighs. I did wonder if the coriander and pepper might be slightly overwhelming as it seemed like quite a lot but it wasn't so I'm glad I curbed my instinct to add a bit less of those.

What beautiful looking pasta, KK. Hope your family get home soon.
Last night we had chicken enchiladas. My youngest hadn’t had them before...she demolished it in record time.
Quesadillas and salad for lunch. I took part in a long dance exercise session for the local cancer hospice this afternoon so I had a small packet of nuts afterwards.
Dinner was crispy skinned seabass on noodles and stir fried veg. Shredded spring onions on top.

What lovely pasta KK! So sorry to hear about your family still being stuck over here.
I love that chicken recipe liketocook. I do have white miso, so just need to pick up some lemongrass and coriander.

OH made a gorgeous peas and prosciutto with cream and pasta and lots of grano padana last night ... no doubt helped by the fact that he used the best part of a 300ml pot of cream for the two of us

I was sitting here twiddling my thumbs last night, wondering which thumb to twiddle next, when a message appeared on Whassup : " Anyone here cook Chinese?"
The story had a happy ending. A neighbour is stranded in Miami and it´s her son´s birthday today. Favourite meal? Sweet & Sour Chicken, Egg Rolls, fried rice!
So I made the chicken (not really rocket science) and the Chinese-style rice, and a nieghbour made some mean egg rolls.
Anything to brighten up someone´s day!!
The story had a happy ending. A neighbour is stranded in Miami and it´s her son´s birthday today. Favourite meal? Sweet & Sour Chicken, Egg Rolls, fried rice!
So I made the chicken (not really rocket science) and the Chinese-style rice, and a nieghbour made some mean egg rolls.

Oh that makes me crave Chinese food!
EM, anything with melted cheese is an instant hit here
Lunch was gnocchi with a kind of Mediterranean vegetable stew, topped with parmesan.
Dinner was crispy roasted skin on sliced potatoes with sea salt and black pepper, with salmon baked in a bag with evoo, white wine, seasoning, tomatoes, asparagus, courgette ribbons, garlic and lemon. Basil would have been a nice addition but it was looking very sorry for itself.

Horrible dinner this evening! Aldi meatballs with veg in a Tesco pasta sauce and some posh organic veg box tagliatelle which managed to be both raw and overcooked in places. Awful. We’d both had a bonkers work day hence the food cheats but I’d rather have spent time cooking
We’re out for late breakfast tomorrow before some kids classes. Their smashed hash browns are wonderful. We’re still going out to eat at the moment but I’m getting more nervous about it all. Covid levels aren’t too high here but rising as with everywhere. I remember how fast things changed last time...we might knock the meals out on the head soon, forced or not!

I cut all the stalks off my basil plants this afternoon, washed them, stripped off the leaves and made pesto
So I had pasta Genovese for dinner, pappardelle (should have been tagliatelle but none in the house) with potato, green beans and fresh pesto
Didn’t really get pesto for years, something in jars used in teaspoonfuls. Got the hang of it now - the stuff in jars is still very handy for adding flavour to things

I struggle with pesto. I love the smell of basil but don't like to eat it.

Do you like the other sorts of pesto? We make a lot of spinach, rocket, and coriander pesto and there's no basil in sight!

I've never tried any other variety - wouldn't like coriander but rocket sounds ok. Not sure about spinach - as some people have said on the Room 101 thread, it's something that I think should be cooked, rather than eaten raw.
