That does sound delicious suffs and I've bookmarked it to try. The the one in the 30 minute Indian book is much simpler and I can't find it online but it's
600g diced chicken thighs marinated in 1/2tsp garlic salt, 1/2tsp coarse black pepper and 1tbsp lemon juice.
The curry is oil. 2 chopped onions, 4 chopped garlic cloves, 1inch piece ginger chopped, 1/2 tsp salt, 1/2tsp coarse black pepper (I added another 1/2tsp at the end as I wanted it slightly more peppery), 1/2 tsp garam masala and 1tsp Kashmiri chilli powder. Plus 10g each coriander and mint chopped.
Cook the onions until soft, add the garlic and ginger a cook for a few minutes add the salt and spices then the chicken. Mix well, cover and simmer until the chicken is cooked. Add the coriander and mint before serving.

It was suffs and doable in 30 mins plus 10 or so minutes prepping though it took me a bit longer (everything does lol) and even then from start to served well under an hour.

I made stuffed peppers last night, the kind where you cut a lid and cook the stuffed peppers whole rather than making open halves
I make it up as I go along based on some I saw made in Slovenia years ago, the stuffing is basically onions, garlic, mince, chopped herbs and seasoning, all browned in a little oil then add a splash of liquid and (my own twist) then add instant couscous until the consistency is right. Then stuff the peppers and cook for 10minutes under pressure in passata with a splash of water and a bay leaf. As my pressure cooker is an IP mini I had to cook my 6 peppers (2 traffic light packs) in 2 batches. Had some last night, 2 portions in the freezer, one more in the fridge.

Yesterday I made a lemony risotto with peas and parmesan based on a Lidl kit.

Tonight I have made a veggie concoction, really to use up some faux bacon bits. It involves roasted sweet potato, tomatoes from the garden, garlic, thyme, sage, half a jar of Queen butter beans, onion, smoked paprika, chipotle flakes, tomato puree... I think maybe the tomatoes were not a great addition, but will see after it's cooked for a bit... I suspect the bacon bits will be overwhelmed!

Cooking on consecutive days... it's a while since I did that! There is risotto left over, so I didn't need to, plus T is out. And office tomorrow so won't be able to cook.

I had some quite invasive dental treatment today so it was a simple and delicious cheese omelette for me tonight.

Looking forward to something more interesting tomorrow.

Love the sounds of the risotto suffs and the peppers Sue. DS1 and DIL2B brought me back a pack of rainbow couscous from Greece that I think would work well in your dish Sue.
My sis ended up having to cancel on Tuesday so we decided to bump the halloumi pasta to when she's here next week. Instead I defrosted some ragu and bechamel and made a quick lasagne.
Last night I was home alone and cooked an easy oven bung in of a pork steak baked in foil with garlic. leek, red pepper and mushrooms. I had it with a baked spud and a corn cobette. Tonight it's sausages, beans and HM wedges.

I had the duck breast I didn't eat on Sunday, seasoned with thyme and pink peppercorns, put a couple of plums in the oven dish to bake with it, then made the roast plum mush with a drop of Maggi, had some new pots adn a leek with it.

Last night I cooked cod loin simply baked in foil with salt, pepper and a knob of butter. I had it with roasted veg and really enjoyed it. Nice and easy but really hit the spot. Lunch is today is tbc probably "something" on toast, we're off to my sister's for dinner tonight.

the ratatouille/ gigantes plaki cross with toast, followed by the last of the banana ice cream.
tonight i made some rhubarb and custard ice cream to see how it would go with ready made custard - very nice. recipe in the ice cream thread.

Yesterday I made a big batch of coleslaw with lots of celeriac in it, and also a big batch of potato salad … last night we had it with some very good honey glazed ham
from the farm butcher, and there’s plenty left for this evening supper when we get back from the festival.

It was my sons 28th birthday yesterday- we dined here.

It's in an odd location, an old converted hanger on an airfield. A lovely terrace overlooking the runway. The food was really good, next time I certainly wouldn’t have a starter as the portions were on the generous side.

It’s a definite keeper - I had the thinnest crust pizza - delicious!

Yesterday we had a late lunch at the Maui Waui festival here in Norfolk … we had a very good tofu Pad Thai from
Thai Mania … we were very impressed https://www.facebook.com/Nakhonfood/
They really have the perfect set up to provide festival food … they seem to do a lot … including Glasto.

Later in the evening OH had some smoked salmon with coleslaw and potato salad from the previous day. I had some farm shop smoked pork and cider pate with mine.
