chinese style veg with 5 spiced, fried tofu followed by coconut ice cream - made with a can of coconut milk, ⅓ of a cup of sugar and about ¼ tsp of vanilla essence. it went perfectly and was soooooo easy (in a machine).
it made plenty for four normal people - but my partner ate about half of it and groaned that he'd eaten too much fifteen minutes later (but he also had seconds of the first course...).

The ice cream sounds nice - and easy!
The 'fish pie' fishcake contained a mix of fish and prawn. The sauce was quite a tasty cheese sauce. Best bit.

I love ramen and haven’t made it in ages . Last nights dinner was grilled pork chop with sauté new potatoes , onions mushrooms and lots of garlic with buttery corn on the cob . Simple but tasty

I made a retro (to me) studenty pasta bake last night with the last of the 'caponata' some bechamel and some provolone piccante that needed eating up. (I would not have had access to provolone in the '80s. It's quite hard to get hold of now.) Parmesan on top.
I had a very small banana with sticky toffee (M&S on special offer) sauce and squirty cream with chocolate vermicelli, after. What I fancies was a banana split but no ice cream.
Gazpacho for lunch and a couple of chocolate-covered madeleine with raspberry centres.

We weren’t hugely thrilled with it. I think skin on chicken thighs would’ve worked better than skinless breasts. Also the ‘saucé was a bit thin.
Overall we liked the flavours but felt it lacked an unctuous ness.
I might work on some improvements some time …

Yesterday (Thursday)’s supper was a total cheat … farmshop Scotch eggs (with smokey bacon for him
and black pudding for me) Waldorf salad and potato salad … all bought from the farm shop and made on the premises in their restaurant kitchen. Very tasty.

GD wanted us to take a picnic out for our lunch but I didn't have much bread. Instead, we cooked pasta, added a tin of tuna, chopped salad veggies and mixed with a mix of salad cream and mayo. She'd never had that before and loved it. I'd have added capers if it had been just for me and corn if I'd had any.
There was some left over, we added prawns and more veg and had it for a quick early supper before skating. The oldies are the best !
I mentioned on another board. Later I had a small piece of soft home made flapjack with salted caramel ice cream. OMG - a winner!!

Yesterday for dinner I made Lemon, garlic and oregano chicken wings with feta dip from the Greekish book. We had them with salad and HM wedges. There's some leftovers for lunch.
Think I'm home alone tonight and will decide later what to have for dinner.

Last night I did a classic, I had a good slab of undyed smoked haddock so I poached it in milk, made the parsley sauce and served with new pots and steamed veg including some frozen broad beans

We had a family dinner last night.
Female cousin is GF, Bro is vegetarian, SIL is vegan so we made it largely veggie.
Lentil and mushroom pate
The white bean and miso hummus I saw on a different thread
Potato and green beans salad
Green salad
Tomato and basil salad
GF Pasta with pesto
Vegetable pie
And a plate of smoked salmon.
Then Eton mess, one of them made with aquafaba.
Enough leftovers for lunch.

For lunch, a small bowl of chilled (homegrown) cucumber and Greek yoghurt soup - this time with fresh tarragon, a pinch of cumin, a pinch of celery powder, a pinch of chipotle and wet garlic.

Last night I cooked Chetna Makan's Black Pepper Chicken from her 30 Minute Indian book. Really good and I particularly liked that the heat mainly came from pepper and ginger rather than chilli. We had it with rice, naan and a raita made with cucumber, tomato and spring onion (also a Chetna Makan recipe). Leftovers for lunch.

I joined the lamb bandwagon last night and had a leg steak which I cooked in the air fryer with garlic and basil oil - with air fried little potatoes and baby broccoli plus juices from the cooking. Impressed with the air fried lamb. Will do it again.
