What are you eating today?
Re: What are you eating today?
The pork chops from the farm shop were huge so instead of cooking them on the griddle and risking the outsides toughening by the time the insides were cooked, I braised them with fennel and served them in a cream and wholegrain mustard sauce with new potatoes and broccoli. Fabulous.

We absolutely love cooking big pork chops by Delia's old recipe: https://www.deliaonline.com/recipes/col ... me-fraicheSuffs wrote: ↑Mon Oct 21, 2024 6:50 am The pork chops from the farm shop were huge so instead of cooking them on the griddle and risking the outsides toughening by the time the insides were cooked, I braised them with fennel and served them in a cream and wholegrain mustard sauce with new potatoes and broccoli. I made a gratin of spätzle with roast pumpkin, faux smoky bacon, Gouda, Emmental, cumin, smoked garlic, sage, crème fraîche, a lot of black pepper.

I have some good pecorino Romano so had a go at cacio e pepe. Should have used a bit more pepper. A nice supper with a side salad.

We had two large thick pieces of sea bass fillet (skin on) simply panfried and eaten with samphire, runner beans and new potatoes with a generous knob of butter, freshly ground black pepper and a big wedge of lemon each. We both said it was one of the nicest meals we’ve had in ages.
Re: What are you eating today?
We had sea bass too tonight.
Fillets cooked in the oven with a Vietnamese style marinade, along with roast asparagus and cubed roast potatoes with garlic and herbs.

Delias basque chicken. I can’t remember the last time I made it, but it’s still good. Esp with some fancy new non-UP chorizo. Now, what to do with the other half chorizo?

I really like the Basque chicken but I prefer it without the oranges.
Re the remaining chorizo, we went for breakfast a while ago and I had sort of scramble which was potato, mushrooms, onion, garlic and chorizo with a poached egg on top.
It went down a treat with good coffee.

Re: What are you eating today?
I have had some hugely invasive dental surgery today so lunch has been a very slow bowl of Heinz tomato soup.
The anaesthetic has just about worn off so I have an ice pack against my jaw, and a man inside my head with a hammer.
I am reclining on the sofa, under a duvet.

Gypsy eggs (similar to to shakshuka) is onions and chorizo cooked up with a can of tomatoes added and paprika etc. Nestle a few eggs in and serve with crusty bread. Cheap and delicious!

Trying to cut down on carbs a bit , generally go more high protein and get a lot of veggies as I find this time of year , I eat a lot more stodge if I’m not careful .
This was a chorizo , Parmesan and roasted pepper salad with a balsamic dressing I made which really hit the spot

Ooh, that looks nice Ameew. I have everything in, apart from the green stuff .
Tonight was an Ottolenghi spiced ‘shepherds pie’ with butter bean mash. It tasted quite sharp, so I added a drizzle of honey to the sauce, and instead of tahini, a drizzle of sesame oil, and a large sprinkling of sesame seeds over the mash. Not 100%, but on our repeat list.

Re: What are you eating today?
A croissant halved toasted and some apricot jammy stuff for brekkie, a very late English mezze done in the AF of half a scotch egg, half a large flaky saus. roll. OH had a sw. potato rosti. Cold bit was half a large slice of gala pie. Small portion of minestrone soup for me for supper and similar sized portion of sage & BNS risotto and a cumberland sausage for OH. He is not a soup lover.
Suff, sometimes simplest is the best. . Some great sounding food out there. WW hope the dental stuff settles soon.

Re: What are you eating today?
I’ve just had a bowl of Not Feijoada which should be a Brazilian stew of assorted meaty things with black beans, I had excess black eye bean layer from my shepherds pie so the stew had that cooking chorizo, a bit of black pudding, onion garlic, red pepper and smoked paprika with tomato purée. Nice. Was going to have brown rice, but I’ve cooked this batch two different ways and it has been horrible so I’m giving up.
