why not get the big pot of the paste, freeze it in an ice cube tray and bag up so that it's always there when you want it?
i squeezed the contents of a big tin of harissa into an ice cube bag, in the freezer, and break one off when it's needed.
mind you, i find the big pots of the curry paste, with a clip over a small hole in the corner of the bag lasts for a very long time in the fridge.

Because I do that with so many things the relevant drawer of the freezer is jam packed with yeast. home made stock, chopped herbs, ginger, various formats of chilli, pine nuts, parmesan rinds, etc etc, even some actual ice cubes! Cooking a good variety of things for one person there's a tendency for some of everything to pass through the freezer at some point in its life cycle. I may yet end up doing that though, but I'll look in the Thai/pan Asian grocery for New Year treats and see what they have first.

I notice that Lee Kum Kee (obviously Chinese not Thai) are now doing more of the smaller jars of things like hoisin and black bean paste, some are in Sainsbury's Lunar New Year offers at a good price, LKK are sharp, they have obviously noticed that Brits who maybe cook Oriental food once a week at most, don't need Hong Kong family sized jars. I got a very cute bottle of oyster sauce, which I was happy with as I don't think it keeps well once opened.

Yesterday was a sort of one pot Spanish rice with chorizo and prawns, tonight in honour of Burns night will be a nice bit of smoked haddock, with parsley sauce and veg

I get my big food processor out of the cupboard, and make batches of Thai Green, Thai Red and Massaman curry paste, once every few months, portion them up and keep them in the freezer. At the same time, I'll make a few batches of pesto, 'breadcrumb' any stale bread and chop any whole nuts, also for the freezer. Makes the getting it out and washing it afterwards more worthwhile.

This usually happens after a trip to the Indian/Chinese supermarket when I can get huge bunches of coriander and large amounts of fresh chillies at a decent price.

But I am lucky enough to have a large fridge freezer in the kitchen, plus another one in the garage along with an upright freezer, so space isn't such an issue.

We'll have our Burns Night supper tomorrow evening.

I have long wanted to make this, from the Dairy book of Family Cookery. Found the recipe online and I have all ingredients except the bacon. i have added a bit of garlic, cooking chorizo and some more herbs (thyme)

Did a real fridge raid dinner , can you tell it’s January ?!

Pork loin steaks cut into strips and cooked with onion courgettes , garlic and massaman curry paste . I added stock and rice to it and simmered down until the rice was cooked . I normally do a chicken and chorizo rice one pot version so this was a nice twist

the other slices of the massive pizza from last night (16" square). maybe with some salad.
i have half of mine left, my partner only a quarter (an ⅛ of the whole). i'm sure he'll fill up on other stuff even if he doesn't really need to!

For brunch today 12.30ish we had some very thin floppy flatbreads and on each half of the circle I layered, slumped red and yellow peppers, a sliced tomato, sliced HB egg and slices of sausages cooked previously. The other half was flipped over and they were briefly warmed in the M'wave. One each with sauces of choice, I had my HM tahini & Thai inspired sweet chilli sauce. Delicious ! OH was surprisingly vocal in a positive way. Now nothing until steak tonight.

Last night we had a stir fry with harissa chicken and quinoa.

Tonight will be a sausage traybake and I’ve decided to cook the potatoes separately and mash them, as I’ve just mentioned them on another thread!

Yesterday it was a shin of beef casserole with spring greens and baby potatoes.

Supper this evening will be a Chinese takeaway … we’ve ordered crispy duck pancakes, Special crispy chow mein, beef with mushrooms and stir fried bean sprouts and prawn crackers.

It does indeed sound delicious.

On Monday we had ramen with a lemongrass and ginger broth with stacks of veg and a piece of hake on top.

Yesterday I had a (delicious if I say so myself) hm carrot and coriander soup for lunch. For dinner, we had keema topped with mash as a sort of shepherds pie.

Tonight we will have dahl with citrus fennel slaw and flatbreads.

Cod topped with pesto and breadcrumbs, green beans and tenderstem, and new pots. Simple, but good.

Has anyone tried a recipe I saw today for quiche made with a flatbread instead of pastry? Possibly Mary Berry?
