What are you eating today?
Re: What are you eating today?
Today I am making Savoy cabbage parcels stuffed with spicy mince. Along with that I am also making lots of gravy and mash (plus the leftover cabbage fried with lots of caraway seeds).
A lot of work, but well worth it as it will feed us for two days, at least.

I had spring rolls for dinner
I was too tired to cook.
They were nice enough. Spring rolls always remind me of my hall of residence where every Saturday, dinner was spring rolls with baked beans on the side. The spring rolls had a bright green mushy filling. Not at all authentic, but I really liked them! Probably my only experience of them. 1986-88.

Re: What are you eating today?
I fished a little pot of cheese sauce out of the freezer and made mac and cheese with a layer of veg, broccoli and leek, in the bottom

Re: What are you eating today?
Thank you. Yes I think you are absolutely right, certainly about the lower temperature. Actually the broth was delicious even the rosemary, just the pork failed.I've just looked at that recipe, if I were winging that I'd probably cook it lower and slower,
Re: What are you eating today?
last night, stuffed aubergines with salad.
tonight, fajitas - been fancying something like that for a few days.
your spring rolls remind me of the summer rolls i made a while back, herbi. i must put those on the menu again - they were rather good and i have plenty of the rice paper circles for them.

Re: What are you eating today?
I had some “Toulouse” sausages from the posh butcher so on Friday I made a sausage casserole with them, green lentils and lots of veg and had it with mashed swede. Part 2 tonight. Their sausages are very good, unlike the supermarket versions of non-British sausages they use an appropriate coarse grind but the sausages are so big I have to get four, and divide each into three stubbiest to make 3 portions. There’s one in the freezer.
Saturday I made prawn linguine with added veg
Yesterday was at friends for roast beef Sunday dinner, with all the trimmings

Haven't had Toulouse sausages for ages. The butcher's ones sound lovely.

I made a spaetzle gratin: spaetzle, BNS roasted in smoked oil, peas, vegan faux bacon, cubed Comte and Emmental, low fat (bought by mistake but possibly worrked better in this instance) creme fraiche, fennel seeds, chipotle flakes, sage, peas, smoked garlic granules, lots of black pepper.
It was really rather tasty.

Continuing with our re-acquaintance with Dennis Cotter's Paradiso books, tonight we had leeks with pinenuts, ginger and lemon, as a side for one of my favourite chicken thigh marinades (EVOO, lemon, mustard, soy, sugar, garlic, oregano and I can't remember what else!) and quinoa.
A couple of days ago I made his beetroot and vodka soup (more details on the soup thread).

Cod loins, topped with a mini pot of pesto and breadcrumbs, fried spinach and tomatoes, and roast potatoes (Christmas leftovers).
The instructions with the fish (Waitrose) said to cook for 41minutes!

Re: What are you eating today?
The cooking times on some of these things are bizarre, usually madly excessive.
I made Mamta’s Murgh Methi 1 (chicken curry with dried fenugreek herb) - a cut down amount and I used pieces of skinless boneless chicken thigh because it suited me. The recipe specifies black cumin seeds, Google says these can either be a variety of cumin or Nigella (kalonji). I used cumin. I also made some aloo gobi and had bought chapati.

Re: What are you eating today?
Brussels sprouts here. Well, it should have been Krautnudeln, but now it is Sproutnudeln, to use them up.
Along with a good helping of Parmesan and fried Nuremberb sausages.

Barnsley chop on a bed of courgette slices, chopped red pepper, cheery tomatoes and spring onions, all cooked in the air fryer with a side of leftover horse-radish mash and spinach
Re: What are you eating today?
After not very much sleep, and a long day, we had a(n?) M&S gastropub moussaka. It was surprisingly nice.
I might fish the label out of the cardboard recycling to see if they’re freezable. I can’t see why not.

Yesterday it was Wrose SF chicken joints, oven chips and home made coleslaw.
Today we had a traybake, chicken thighs, chorizo, mushrooms, baby potatoes, shallots and sweetcorn.
