A banneton is a basket (prepared prior to first use by coating with rye flour) in which a sourdough loaf is proved.

yup, wot she said. my sourdough bread is based on the recipe in the 'tartine bread' book - with a few little changes.
the banneton in many recipes is coated with rice flour rather than rye. it doesn't stick at all - a game changer for me.
honey in the granola recipe i use which, last time had chopped, dried FIGS added to the mix.
