I absolutely love Gruyère cheese . Bought some before Christmas and wolfed my way through it . Can see it’s go really with bns

Has OH the risotto maker know of calrose rice KC?
Also read up a bit on rice types - very interesting actually - sushi rice may probaby be a bit stodgy as Lokelani says. It's actually a variety called calrose rice and doesn't specifically say sushi rice on the bag, although it's definitely somewhat of a 'sticky rice' aimed at east Asian type cuisines which is what I use it for. Having said that it is listed in Bon Appetit as a medium grain rice in this article, so might try giving it a go.

Arborio and carnaroli specifically absorb liquid for the characteristic chewiness rather than releasing loads of starch.
Wanting to try out the dried flowers, too!

I have to try so hard not to eat it all when I'm using it in cooking. The sweet, nutty yet strong flavour gets me every time. It's always a bit for the food, a bit for me...

Hmmm… ok, I’ve only ever bought Gruyère when it has been required for a recipe, so always cooked. I’ve never even sneaked a taste when I’m prepping. I can see that is going to change. Next time!

If it's Le Gruyere AOP it's lovely stuff - but you do want AOP, ideally - sometimes available at Lidl in alpine week
Like many chaeddars, not all Gruyeres are up to the original made in its home territory is a different beast t the mass copy
I admire your restraint in not tasting - up to a point, apart from greed making me sneak bits of cheese, I do like to know what the ingredients taste like individually for future reference,

I just checked the gruyere in the fridge, the Sainsburys Taste the Difference one is AOP and I suspect the Waitrose & M&S ones are too. They're the only ones that seem to have that amazing depth of flavour. I buy whoever has a good one on offer, but it would be interesting to taste test them against each other.
