A busy day yesterday … OH cooked Wrose SF chicken legs with oven chips and sweetcorn.

The other night, I made a... dunno what to call it. But it contained grains, bottled chickpeas, peas, tomatoes, spinach, some warming spices (cumin, chipotle, smoked paprika), garlic and halloumi. It started off as a quinoa-based stir fry that was discounted in Waitrose, but I kept adding things to it as it wasn't very interesting on its own. Anyway, it was nice. Leftovers were eaten yesterday with a runny fried egg on top.

My very much missed Uncle in law would have called it veggie slop (he was very much a meat eater but both his sons were vegetarian) which maybe why I dreamt about him and his husband last night.

Not sure what to make/have tonight.

Last night we had grilled sea bass on top of a stew made from chorizo, tomatoes, onions, cannellini beans and spinach.

Tonight I’m trying a new recipe; Korean pork fried rice.

Smoked gammon 'joint' with a celeriac, cauliflower and carrot mash (with a good dollop of greek yogurt and some truffle butter) and garlicy mushrooms.

Red pepper and mixed tomato omelette with oven chips nd baked beans. Simple, and tasty. And it avoided us having to walk to the shops on the (still very) icy pavements.

An Italian sausage, lemtil and fennel thing from the freezer with a few spuds and cauli. Stuffed, it was a lot of lentils

Some lovely sounding food. How was the fried rice WolfGirl?

Yesterday, our lovely Ukrainian lady who helps us with cleaning decided to make us lunch and made Deruny (sp?) which was a kind of potato pancake with grated onion and garlic. It was delicious, if somewhat heavy!

For dinner, we had chicken breasts flattened and coated in Waitrose breadcrumbs cooked in the air fryer with hm chips, broccoli and a spicy tomato sauce.

The fried rice was very tasty Rocky though it would have been better with more rice and maybe another vegetable. The original recipe was for one person so I had to double up on some ingredients, though not all as we are not massive eaters. Plenty of meat though, which I kept the same as for one. Definitely will do it again with the tweaks as mentioned.

Tonight will be Thai inspired cod and prawn fish cakes (Tesco) which will have a sweet chilli dipping sauce and a salad. I’ll do some potato wedges for OH but I’m trying to cut down on carbs during January. Not doing great at the moment so it might extend into February. :lol:

I was worried it would be too rich for our peasant taste but it was surprisingly nice.
I served it with plain rice which went well. Would have been better with a green salad on the side.

Lidl do a rather good pork schnitzel - it's a pack of two, but one is fine for both of us so we get two meals out of one pack. With roast potatoes and sweet potatoes sliced quite thinly so they cook quickly, with green beans.

A burger with most of the trimmings, no nice tomatoes so had some of my bargain cherry tomatoes (still not really ripe 5 days after the BB date) roasted and served on the side, yum.
Followed by a little piece of Stilton and a little glass of Sauternes I put in the fridge to have at Xmas but never did, someone gave me a half bottle pre-lockdown so of course I didn’t drink it post Covid. Time to drink it up before the cork gave way, delicious., I don’t even like most sweets wine.

Just need to think of something to do with the rest of the Stilton.

Snap! Wolfgirl … our yesterday was the Wrose version of those Thai-inspired salmon and prawn fish cakes with edamame, bean sprout and kale stirfry with noodles and a sweet chilli sauce.

It was 9 Deg in the house when I got up to make tea this morning :shock:
It isn't now.

Leicester Tigers have a home match at 8pm tonight.
Rather him than me.

He's going with his fellow season ticket holder.
His pal's wife is coming here for something to eat and a film.
Much more sensible :lol:

Chicken thighs in one drawer of the airfryer with garlic and some rosemary salt I bought , parmentier potatoes in the other drawer then came together with tender stem broccoli , peas and a homemade mushroom sauce . Just a bit of a twist on standard meat and two veg , but very nice

Pizza. Haven’t had one for ages. A Crosta and Mollica base with tomato sauce, added grated cheddar, mozzarella, salami with fennel seeds, spinach, red onion, jalapeños and Italian seasoning. Side salad of rocket, pear, blue cheese and walnuts.

a huge tray of roast veg (peppers, courgettes, onions) with slices of halloumi added for 10 mins before the end, hummus and wholemeal pittas

Tonight will be chicken thighs in a traybake with grapes and shallots

I made penne pasta with Brussels sprouts and Stilton
I followed this recipe for method, but changed the amounts and proportions, I can’t eat 175g of dry pasta (cooked!) and it seemed silly to use more Parmesan than Stilton, so I was generous with the Stilton and just finished with a grating of Parmesan which did improve it. Was ok but not exciting.
