After my success with my raspberry posset last (?!?) month, I would quite like to make a cherry one, but I can't find a recipe. Could I just use the raspberry recipe (which contains lemon juice to set it) with the same weight in cherries?
The raspberries were pureed. Not sure if that would really work with cherries...
Cherry juice?
Am I being over-ambitious?

Any other recommended posset recipes people have made and liked?

i would go for it.
the cherries may have a little less water content than the raspberries so you may need to make a slight adjustment (if it's a large proportion of the recipe).

I suppose if it goes wrong, it's not time consuming to make, and will probably still taste ok.

I often buy the shortbread if I can't be bothered.

My ex mother in law loved me a lot, whenever we visited she'd make me two things. Lemon Posset and her never yet surpassed homemade coleslaw. And I always took the leftovers home.

I've not had Lemon Posset since her dastardly son left me for another, but I may well have a go at making it myself now.

I mostly make a simple lemon one:

300ml double cream
75g caster sugar
juice of 1 - 2 lemons depending on size

or this one:
Lemon & passionfruit posset

300ml double cream
4 tabs caster sugar
3 ripe passion fruit - I just halved them & squeezed with my usual juicer after doing the lemon, didn't bother sieving out the pips
1 tabs just over of lemon juice (was 1/4 of the lemon I used)

I'm fairly sure I made a lime and ginger one once, but haven't made a note so can't remember if it was nice or awful!

I'd post my delicious raspberry one but it would infringe copyright.

I am still pondering how to go about making a black cherry one. I would have thought cherry juice and some bits of cherry might be involved... I am not experienced enough to experiment, perhaps.
