Yesterday’s supper was Toad in the Hole … traditional sausages from the farm butcher, cooked with a chopped onion in a bed of light and fluffy batter served with broccoli and an oniony gravy.

I had a go at this a Rukhmini Iyer traybake last night, the only changes I made to the main recipe was to use a good ras-el-hanout instead of bhaharat and to finish with dried mint instead of fresh

It’s ok, took much longer than the recipe suggests, I think the chickpeas were too wet. I think I’ll have harissa yogurt with it tonight to shoo sh it up a bit.
I made a proper bulgur pilaff to have with it, using the very coarse pilaff bulgur and some vermicelli

It’s surprisingly bland, I think it needs a condiment or possibly finishing with pomegranate molasses as well as lemon juice and fresh pomegranate. Like I said, OK but nothing special.
I think what I’ll take away is the idea of adding (well drained and possibly even dried on a cloth) chickpeas and halloumi
I was very pleased with my skilful prep of the pomegranate, I think the secret of my success was getting one that was actually properly ripe for once!

Some sort of vegan supposedly Christmassy Pret sandwich for lunch. (Ok but not delicious.)
dinner: trofie with a very quick sauce made from tomato and olive paste, chipotle flakes, capers, cubes of provolone piccante, thyme, smoked garlic granules, a dessertspoonful of creme fraiche, lots of black pepper, and Parmesan on top.

Tuesday night I made an omelette with faux chorizo and peas with chipotle flakes and other herbs and spices. Quite nice
I was getting back into cooking before my week of anxiety last week. Still not quite back to normal but need cooking inspo again.
Anyway I actually had lunch today - a 'Japanese style' rice noodle thing from Lidl. It was really oil and a bit bland, so I added things to it... and made it too salty!
Not sure what to do for dinner. On my own again. Not at all hungry. But time to dig out a cookery book or two.

This evening I roasted a leek, some carrots and a can of chickpeas with some ras el hanout and aleppo pepper - drizzled over some tahini and Greek yogurt. Followed by apple and mixed Summer fruit crumble. We started with the rest of OH's carrot and ginger soup from lunch.

This evening we had the second half of the chilli from the other day … thus time we had it with huge baked potatoes, yoghurt and lightly pickled red onion.

My first introduction to chilli was in the canteen of the Virgin Megastore on Oxford st where they served it with baked potatoes
I had quite fancy smokey nachos for dinner with two types of salsa, refried black beans, herbs and spices and lots of cheese. I forgot the sweetcorn...

Tonight I have a goodly amount of salmon which I've sliced into portions & will 'sort of' teriyaki later & fry potato scallops to go with plus green beans & sugarsnaps salad.
It's been a funny ol' week - I've cooked a lot but can't think what apart from last night's chicken & chips sometimes it all seems to meld.....I've just remembered a Thai prawn curry featured one day & a pork chops full-on roast dinner at some point too.........
