avocado dressing ...

Afternoon all, I want to make an avocado dressing for a chicken salad for Tuesday lunch. I won't have time to prepare it on the morning; do you think I could make it on Monday afternoon and if it has lime juice in it it shouldn't go brown?

Also, do you happen to have a fave recipe up your sleeve? :D

I make a dressing with yoghurt or sour cream & a goodly amount of finely chopped coriander - it keeps bright green for days in the fridge - if coriander is not your thing then coating the sauce with a very thin layer of water before going in the fridge & pouring off just before using works.

I’d go down the yoghurt /sour cream route too , with a good zing of lemon juice . What else is in your salad ? I like the coriander idea , garlic would be good too

Tray-baked chicken from the night before - probably marinated in lemon, evoo and possibly some yogurt, haven't quite decided yet. I had thought about basil in the dressing, but coriander is a nice idea.
Nice baby tomatoes.
Interesting mixed salad leaves.
Slivered toasted almonds.
Parmesan shavings.

We often like fruit in a chicken salad, but haven't decided if we're going down that route, and if so, what.

Any ideas welcome!

Not having much time to do any prep before other than combine all the ingredients needs careful organisation!
