Flatbreads … your favourite recipes …

I used to make flatbreads all the time when the children were at home … They were a good way to stretch a meal when they arrived home with a room full of teenagers wanting a meal.

Now I’ve rather got out of the habit and don’t have a “go to” recipe anymore.

How do you make yours? Yeasted or not? Self raising flour or not? Yoghurt or not? What sort of flour do you use … wheat flour, buckwheat, rye or a mix?

Interested in seeing everyone's recipes, too, Suffs. I have never made them but if there are some easy ones around that don't use yeast or require too onerous cooking/baking, I might have a go!

I tend to buy mine, as I only want the odd one.
I keep them in the freezer, often Dina Lebanese Sourdough , or others in the Dina range, all good

Equal weights of SR flour and full-fat Greek-style yogurt, plus appropriate flavourings, if liked. Simple as that. Rolling the dough thinly enough was the secret, I found:

Wow, that looks simple. Thanks.

I have annotated a similar Jamie Oliver SR flatbreads with "OK. Try again.Halved the recipe." He begins with 350 Gms SR plus 1Tsp baking powder.

Edit, my attempts with yeast have not been a roaring success either.

At the posh cookery classes with the ex royal cook, we did something similar to this - plain flour, no yeast but rolling with a rolling pin seemed important. https://www.bbc.co.uk/food/recipes/quic ... eads_43123

I'm with Suelle though, the easy SR flour mix with yogurt recipe is extremely good.

I think it depends a little on the end result you want too. SR produces a fluffier bread than plain. I've not tried other flours but have made buckwheat pancakes and think that buckwheat flour would work well (with baking powder if you want to use SR).

All my childhood, if we ran out of bread we made 'puffs' to have with a fry-up type meal. Just SR flour and salt mixed with water and fried, not dry fried, in small rounds. I'm still fond of them.

Seconded, thirded, fourthed…..

Suelle’s recipe of equal quantities of SR flour and yogurt is what I do. A pinch of salt helps. About a golf ball size rolled flat, makes a nice size and it just fits my smallish grill pan.

I forgot to say that I made some the other day and was very pleased with them.

I added a generous quantity if cumin seeds and some seasalt.
