I'm very envious Suffs . We'll need to wait until we do an in person shop for the belly strips, can't trust online not to be too fatty!

I leave it on and the method of cooking makes it sort of sticky/chewy - I love that but some may not.

I’ve left it on … I like chewy pork rind.
I’ve made a smashed Chinese cucumber salad to go with it as well as the braised pak choi …. I’m getting hungry ….

Thanks again for all of the advice which has resulted in some delicious sounding recipes. Definitely going to try Norfolkman’s.
They were a total success. Served with potato wedges cooked in the same time (unhealthy but delicious) and a tomato and cucumber salad.

I've had a cubed belly marinating in white wine vinegar and various spices, to make a Goan pork curry this evening.

The thing I do most is with prok belly is probably Chinese red-braised pork (hong shao rou) - there are lots of reipes as it is made all over China, Fuchsia Dunlop as versions in Every Grain of Rice and the Revolutionary Chinese Cookbook (which I prefer)

The internet is full of recipes, mostly the sort of Boring Blog that feels the need to explain the entire history of soy sauce before adding a dash; here's a third straightforward Fuchsia recipe, neither of the others use the overnight cooling. I don't use a wok but a small stainless steel stewpan, often in the oven; the main thing is that you need a container in which you can caramelise a bit of sugar in oil, then simmer a stew. It freezes very well. I also don't add eggs which aren't in the Revolutionary version (as enjoyed by Chairman Mao, possibly).
