Surely cooking intuitively is just common sense . Most of us make substitutes as and when and cooking without recipes is part of everyday life . Reads like an article with no real meaning

I disagree. When I cooked all the time I was a recipe follower and was hampered by my non ability to be spontaneous. Maybe that was back in the eighties though.

I didn't read the whole article, I did think some of it was fairly obvious - subbing half a tin of sardines that need using up for anchovies in a pasta sauce for example
The thing is you don't have to be either or, I follow recipes quite a lot - but not every time I cook, and I don't always follow recipes slavishly, one of the pleasures of cooking for me has always been that having work where everything is done to set protocols and with precision it was nice to do something where you could estimate and change your mind on the spot

Quite a good analogy I thought. I use a map the first or first few times I go somewhere and then experiment with different routes. There are some where I go wrong every time and some where I appreciate guidance. Then someone tells me of a new route which sounds worth a try. Others I know turn on satnav to get out of their drive and never get their bearings.
You do have to learn to drive first though.

What an excellent article PP! I’ve not had the West African version of fufu, I have had the Caribbean version, foofoo, but I think wasn’t keen. I have had pones, tasty but stodgy sweet traybakes, which are ok. All this a very long time ago

She says you can get cassava flour. I think if things that appealed to a European/western palate could be produced from it it would be very helpful. When you see the huge rise in vegan foods which many wouldn't have cared for until recently it seems feasible even before people are so hungry they'd eat anything.

Cassava flour is quite widely available, either as a "world food" or for gluten free cooking
This is an interesting article on cassava flour, one thing I wondered about is the difference between tapioca flour and cassava flour, apparently quite different, tapioca flour being an extract, analogous to corn starch, but cassava flour being the whole thing ground up

I would never use gelatine for a community event, so many people can’t/won’t eat it, and I was surprised the judges didn’t think that was a problem.
