Guess what I had for breakfast! My Christmas Turkey & Ham Pie!
Not the prettiest pie I've made, but tastes better than anything you'd get from Tesco...
Footnote: I love hot water crust pastry, but unfortunately making it yourself, you get to see exactly how much lard goes into it, so it's only an occasional splurge.

Sakkarin, that looks wonderful. Was it Josh on the old Beeb board who did a blog? I followed his pork pie recipe (a free standing Melton Mowbray style, not in a tin) and it was a work of art. I was thrilled with the look of it but sadly, I didn't get the meat seasoning quite right (needed a bit more salt). I did cook and taste a little before baking but it's not quite the same.
I like making a 'Christmas Pie' with all the leftovers - including veg - to eat hot. It's nice cold too.

Took a while because I was waiting for him to OK me using his pic...
Here's some "Leftover Christmas stuff" pies made by a friend of mine who spent half his life in catering (and the second half in music production). Look at the accuracy of those purfles, that's 10 out of 10!!! P.S. They're frozen, so there's a slight craze on the surface.

So do I …. I also have Chinese crispy pork belly envy and have been trawling the internet for recipes … Sakkarin do you have a link to a recipe you’d recommend? I’ll be going to the farm butchers’ tomorrow and they have marvellous pork belly

I haven't got a 100% go-to recipe for crispy pork, I don't make it often enough, and the gaps in between are so huge that I've forgotten which recipe I used!
The latest batch think I used Sunflower's recipe, but did half her way over a water bath and half just roasted "normally" (but I think with baking powder and vinegar like the video below).
The "normal" one came out how I like it, very crispy. There were several Youtube videos that I checked out before doing it, but I can't remember which one I followed most closely! This is one of them...

'Purfles'....................who knew there was a word for it, I've always called it crimping, but much prefer purfles, sounds like something a cat would do..... purfles it is.......

Also agree with Zero - lard is not so bad for you, just gets a bad press.
