Thanks all. It’s the first time I’ve had to freeze it as I normally use it within a couple of days but couldn’t this time.
Although I prefer it chunky I do occasionally have it blitzed so if I have to freeze it again that’s what I’ll do.

I usually partially blitz chunky soups, just enough to thicken them a bit but still with plenty of texture. I find they freeze well.
Bacon and leek broth for us this week. A bit of a use up as I've half a pack of bacon needing used and ham stock already in the freezer.

Oh that sounds good, I sometimes make a carrot/parsnip/potato soup very much along those lines, I can see apple cider vinegar would be a good addition I usually use a little lemon juice.
I have a huge (Tesco weren't kidding when they described it as large!) butternut squash, I think butternut spicy butternut squash and red pepper soup will be on the menu this week.

I've just made and eaten particularly good soup for lunch. I bet I could never quite replicate it!
I had a good portion of a plain beef casserole with a lot of a quite liquidy gravy. Cooked up veg lurking in fridge with the gravy (cauliflower plus leaves and some stalk, mushrooms, carrot, onion), added tomato puree, two big pinches of Chinese 5 spice, garlic powder S&P and a good shaking of chilli flakes. Added the meat and rest of gravy, gave a light blitz with the stick and added a tin of cannelini beans.
It made a really thick, rich soup and tasted wonderful served with a sprinkling of grated cheese and some mixed salted nuts. There's some for tomorrow and some for the freezer. Love it when leftovers make a better dish than the original!

I made a batch of soup for OHs lunch flask this morning … 3 sweet potatoes, 1 cup red lentils and a can of coconut milk, with a piece of ginger the size of my thumb, chopped finely, and 1 heaped tablespoon of turmeric. Simmered until soft and whizzed. Delicious

Suffs, I'd like to try that but I'm concerned the combination of sweet potato and coconut milk would make it sweet.
Does the ginger and turmeric balance level it out?

It is a bit sweet … which OH likes and wouldn’t change … however I think reducing the 3 sweet potatoes to 2, adding a tin of chopped tomatoes and perhaps some Marigold bouillon powder would work to lessen the sweetness.

The usual thing I find with any soup or stew containing coconut milk is to finish with a squeeze of lime juice which cuts through both sweetness and richness

I love it in Lancashire Hotpot. As far as I’m concerned it’s the star ingredient.

I love barley and lentils in soup.
Definitely still soup weather here and as I have various lurking veg and excess milk I'm later I'm making a pot of cream of chicken and veg.

Same here ... but my children loathe it ... I don't cook it for them any more ...
Today I've made a curried parsnip and coconut soup for this week's lunch flask for OH ... five large parsnips and one onion, peeled, chopped and softened with butter and a dash of sunflower oil, then circa a tablespoon and a half of Wrose Med Curry Powder .added and cooked for a few minutes ....then it all simmered until soft with enough Marigold veg bouillon to just cover the veg,.... and then a tin of coconut milk added ... whizzed in the blender and now it's portioned in containers and cooling to freeze. OH has tasted and pronounced me to be The Soup Dragon

I remember trying that once … IIRC it had a bitter metallic tang
