I made a crustless quiche, frittatta or whatever you want to call it tonight containing bits of veg which needed using and a mix of parmesan and cheddar on top. Very nice with a couple of crackers and lettuce. Finished off the thick veg soup and falafel at lunchtime.

On Sunday might we had a veggie and ham bake in a cheese sauce with thinly sliced potato on top. Delicious!
Yesterday I had pea and ham soup for lunch and Thai green veggie curry with noodles for dinner.
Tonight might involve blue cheese as we have lots to use up I’m inspired by Sue’s pasta!

EM I tried that but it did not make much difference, it took half an hour for my tastebuds to return to normal and I only had 1 bite of it..... OH was not keen on them either.....
Found some sausages in the sausage drawer so got them out for a 'toad' later in the week.

Broccoli and blue cheese risotto for us tonight.

The risotto sounds good ltc.
Last night we had roasted peppers stuffed with leftover ragu mixed with cooked rice and cheese...packed into the peppers and then baked for 20 minutes. Served with salad and garlic bread.
I also made a chilli and herb butter for the freezer as we had a lot of parsley, mint and basil which needed using.
Tonight we're having crispy seabass tacos with lightly pickled red onions, guacamole, salad and some spiced sweet potato wedges.
Tomorrow I think we are having aubergine roll-ups...slices griddled and filled with mint, feta, pine nuts. With a cous cous salad.

Last night was pasta and pesto. Not enough basil to make a traditional pasta, so used what little I had with a green chilli and a handful of spinach leaves along with walnuts instead of pine nuts. Delicious.
In honour of OH's Scottish mum, its veggie haggis tonight with mashed swede, roast potatoes and sprouts. Have a punnet of raspberries to make a cranachan and will have a nip of our favourite Laphroaig Quarter Cask to finish it all off. Looking forward to it.

Burns night
The haggis “bonbons” ( just little haggis meat balls) were to be cooked in the oven, so I did roasties, mashed neeps, a bit of kale and whisky sauce (well, onion gravy spiked with Scotch)

We’re still more or less kitchen-less, but managed the M&S haggis stack and whisky sauce, with some microwave veg. It was delicious! We managed to eat it all too, I think it was a serves 4 size . I’m not sure OH knows what the actual ingredients are (he may suspect), but even he said it was delicious.

The proper Burns Night offerings sound lovely.
I didn't get a haggis, it's a bit carby and although I had a swede ready I had half a squash that needed using sooner so it was beef in gravy, mashed butternut squash and sprouts plus a miniature bottle of scotch which has been kicking round for a while ... it worked well .

Really enjoyed our Burns night supper. Those McSween's veggie haggis are really good .
Tonight is a paneer, red pepper and spinach curry in a makhani style sauce. Made it this morning, it smelt delicious.

I worked all day today so J was chef de cuisine.
He came up with kedgeree a la Hairy Bikers, our favourite version.

We didn’t have blue cheese the other night but after your post ltc I’m going to pop it in a soup with broccoli.
We had OH’s parents around for dinner last night. We had min chicken fillets coated in breadcrumbs and Parmesan with caponata, roast potatoes and tender stem broccoli. MiL rarely gets cooked for so I was delighted to do it.
There is a portion of carrot and coriander soup which will be lunch. We might be going to watch some live music locally tonight so no idea what dinner will be!
