Cauliflower "rice" ...
OH has a yen to do something with cauliflower "rice" this evening - we're planning on grating the cauliflower (not sure whether to use the fine or the large Magimix grating attachment).
Any ideas? I gather the one thing you absolutely must not do is boil it like real rice as it turns into cauliflower porridge!

While I was actively trying to lose weight, as opposed to trying not to put t on, I tried cauliflower rice.
In the end, I found it was only palatable, or perhaps I mean a reasonable substitute, when it was cooked half and half with rice. Cauliflower rice on its own isn't absorbent, so it's not good with dishes with sauces. With some real rice there it was better.
You might find something like a egg fried 'rice' or a pilau would work well, as you're not using a lot of water to cook the cauliflower. You might need to add a tablespoon or so of water and cook covered for a little while so the cauliflower cooks in the steam and heat.

The coarse side of a box grater, IIRC. I think I tried doing it with a knife occasionally too.

I make cauliflower rice occasionally
I can’t be bothered to grate it, I chop it in the the Magimix, cautiously, using very few pulses, much better imo, it does help to start by cutting into reasonably uniform chunks
I then cook it in my microwave steamer (my stove top steamer has big holes and wouldn’t work). Again cautiously as I don’t want mush
It’s quite nice for a change and not as strong tasting as you’d expect

I think it’s vile. Slimming World used to praise it but it’s not for me.

I just give it a whizz in the food processor until the right consistency. I microwave it as has been mentioned or add it to the pan last if
mixing it to create an 'all in one' dish with other veg & protein - it really doesn't need much cooking and I think blends surprisingly well with most appropriate dishes.

I've only made it once, a few years ago.
Can't remember what I did but I enjoyed it.

Morning all - we tried it twice - the first time we attempted to roast it but it didn't really work very well. The second, we microwaved it and it was fine.
Compared with £1.99 for a 200g pouch if you buy it, 83p for a whole cauliflower that gave us about 500g of "rice" plus all the leaves etc as a veg in a veg curry, was remarkably good value!
We pulsed it in the Magimix, and found it was better to do it in batches and take out each batch as we made it.
Definitely one for another outing - made a nice change from rice or quinoa.

I'm glad it worked! I find it surpisingly good and it seems just as filling as rice which must be a psychological thing!
I don't fancy buying it ready made, one wonders how long it's been hanging about.

The brands I just looked at on Ocado are all 100% cauliflower with nothing added.
