I'm going to make this rocket and coriander pesto tomorrow and see that it has 2 tbsp of nutritional yeast in it.

Do you think it's really necessary for the taste?

I've never used it and kind of didn't really know about its existence!

Thanks!

I think the nutritional yeast is a replacement for the cheese which is usually in pesto.

If you are vegan you could use any type of 'pseudo' (for want of a better word) cheese, or cheese itself if you are not vegan. From the look of the plate in the picture, the nutritional yeast would be the only form of protein in that meal.

If you don't want any sort of cheese or cheese replacement, just leave it out.

Yes, Uschi, I agree, it's terrific! When I originally used a recipe for rocket pesto, it also had some chilli in it!

That's interesting as I like nutritional yeast but hadn't thought of using it in pesto. Must give that a try!

Cooked these yesterday and definitely a keeper, really brought out the flavour of the carrots - https://www.theguardian.com/food/2021/d ... a-ada-boni
I used a mix of dry vermouth and chicken stock as the braising liquid which worked really well.

Tried the two ingredient pizza dough which is 0%fat free yoghurt mixed with self raising flour and it turned out amazingly well . I was quite sceptical , but it definitely works and is so quick and easy

That looks terrific Amy.
Do you use a pizza stone?

No just a pizza tray in the oven . Honestly the base was fantastic for something so simple and straightforward … might make tomorrow at work

Talking of new, I found this in the cupboard and made it to go with tonight’s stew. Very good indeed.

I received a freebie of the cheesy version and I was surprised how good it was. A pack of instant mash is always handy to have. :)

I've made the yogurt dough as flatbread in a pan but never as a pizza base or oven baked thing. Sounds lovely.

I have some yogurt that need using so might attempt a pizza style dough.

When we were in Tobago many moons ago I bought some roasted jerra/cumin powder. We have loved and used it over time but today I made my own. Just dry roasted the seeds on the wood burner over a long time and then grinded them in the machine, the whole house smells amazing ! Will be using them tomorrow in some batter with some sausages for Tobagan toad in the hole.

I cooked this yesterday and can definitely recommend, no pictures as I didn't want the eggs to overcook but it looked pretty much picture. https://www.bbc.co.uk/food/recipes/vegg ... bake_63924 For the two of us I used the full amount of the veg and beans but reduced the number of eggs and amount of tortilla chip/cheese mix. There's some veg mix leftover.

We're gradually trying more recipes in Ottolenghi's SIMPLE. The steak salad (p.205) was really fab, even with our amendments to use what we already had. (H-m rocket pesto instead of basil and rocket, spinach and watercress salad instead of red chicory.) Will definitely be doing it again, and we're having the braised eggs with leeks and za'atar tonight, for the second time (p.6).

Looks delicious, I really must look this book out and start cooking from it. :)
