Re: What are you baking this week?
Maybe an egg/yolk added to tinned custard would set it?
Re: What are you baking this week?
I had one for elevenses this morning and it wasn't as runny, but it was stone cold and a bit claggy.
I'll try the fresh custard. I may have to wait a bit. Tesco and Sainsbury here are virtually inaccessible because of the fuel queues.

Re: What are you baking this week?
I baked yesterday ... my usual spiced apple tray bake (I buy apples with the intention of eating them, but rarely do ) and also decided to give PP's Blueberry Crumble Cake a go ...
I had already had in mind to bake something for a Vegan friend, so when I got the recipe, I must have subliminally missed out the bit about mixing an egg with orange juice and oil ....
It wasn't until the cake was in the oven and I read over the recipe that I realised my mistake. Of course I couldn't have included egg anyway so I mixed the oil and orange juice together and dribbled that over the mix and carried on baking .... .... It has turned out delicious, albeit a bit crumbly without the egg.
I think that the liquid from tinned chick peas can be used in place of eggs, but does that work ?
Any other suggestions/recommendations from the like minded out there ?

Yes, you can use aqua faba in baking. To be honest I tend to make vegan recipes rather than try to adapt things. I found this info online https://food52.com/blog/24554-best-egg-substitutes

Re: What are you baking this week?
thanks Smitch
TBH I just didn't see the bit about adding the egg etc ...
I did do a google search for a vegan alternative to this recipe, but there was none that seemed to fit... unless you know different

I'm not sure what the original cake recipe is like but Vegan Richa is pretty reliable

Re: What are you baking this week?
I am baking a French cake mix cake Not sure it's working that well. It's only supposed to take 15 minutes, but after 25 it seems pretty uncooked still but on the verge of burning on top. It is supposed to be gooey in the middle. Salted caramel and chocolate.
Will give it another 5. It's supposed to be dessert, to be served with creme fraiche.

Re: What are you baking this week?
Love the sound of the cake herbi!
I am going to a kids halloween party over half term where there are lots of dietary restrictions. Does anyone have any suggestions for vegan and dairy free baked treats, please? Something cold and easy for little fingers rather than served hot, or needing cutlery.
I am tempted to offer to bring a big fruit platter/fruit salad if I cant think of anything suitable!

Re: What are you baking this week?
is that sweet or savoury?
'cheese' straws using yeast flakes - or flavoured with marmite instead.
sosmix sausage rolls.
date (mincemeat, apricot or other filling) and oat slices.
flapjacks.

Re: What are you baking this week?
I meant sweet but i'm liking the sound of those savoury items, actually.
I thought about flapjacks but dismissed the idea because of the butter content. I've just googled dairy free flapjacks and I think that might be the one to go for - thank you!

Re: What are you baking this week?
I've a book called 'The 15 Minute Vegan' (quick vegan things as title suggests). There's not much of a 'take to buffet' sort of thing in it but it does have:
Sticky Nutmeg & Date Palmiers (using dairy-free puff pastry)
Courgette & Thyme scones(made these once, they weren't bad).
Peanut Butter Blondie Flapjacks (needs 2 tblesp vegan butter)
Bonfire Apples (toffee apples dipped in hazelnuts)
I doubt any sound very exciting but can write out any recipes if required.

Re: What are you baking this week?
I use bought puff pastry and vegan Richmond sausages to make sausage rolls
Re: What are you baking this week?
Tonight I made some Chelsea buns. I had all the ingredients in a box to make them with our granddaughter on Saturday, but in the end the weather was good and we went out for a walk instead. So they will be eaten tomorrow when No.1 son and DiL comes to stay. It is his birthday today.
Made as per the recipe, but a bit too crunchy on the outside and a bit doughy in the middle. Next time I will drop the temp a bit and do them for longer.

Re: What are you baking this week?
Thanks for the dairy/vegan party ideas! Sorry, I meant to come back and say that. I'm going with flapjacks and probably one of the savoury ideas too but will come back to the links and suggestions next week.
Those Chelsea buns look great Aero.
If I have time over the weekend i'm making a chocolate chestnut pudding cake from the River Cottage Christmas book, assuming I can get my hands on some cooked chestnuts. I tried two supermarkets recently with no luck.
