ZC asked about tofu recipes on the 'tried something new' thread. I thought I'd start a new topic so the ideas don't get lost.

I love tofu and do eat a fair bit of it.

We like tofu scramble for a weekend brunch. I don't usually follow a recipe but used this one a lot in the past: https://www.vegetariantimes.com/recipes/tofu-rancheros-0/ I've found combos of typical Indian or Tex-Mex herbs/spices work. I also use whatever veg is looking sad in the fridge.

I like this recipe too for chilli tofu https://www.theguardian.com/lifeandstyle/2017/oct/21/chilli-tofu-recipe-vegan-meera-sodha I really like Meera's recipes, her books are fab but there is a good selection in The Guardian.

I'm also a big fan of Vegan Richa https://www.veganricha.com/recipes/. I've made this bowl a few times https://www.veganricha.com/deconstructed-vegan-summer-rolls/. I often cook the tofu in the air fryer.

I've also used marinated tofu to top okonomiyaki.

I also use tofu in pad Thai. Sometimes I get the fried tofu from the Chinese supermarket but if not, I'll fry or air fry it first to get it nice and crispy.

I'm not a huge tofu eater but my nephew's ex-gf introduced me to bbq tofu "fries". Firm tofu sticks dipped in bbq sauce then cornflour. Fried for a few minutes then popped in the oven to bake until golden & crispy. I've made them a few times now too and had them in a wrap with crisp salad, They are very moreish. :yum

I thought we'd had a tofu thread too...

I press mine in a tofu press (definitely worth it. They are not very big.) then marinate in whatever I fancy.
I always put it in green/red thai curries, as well as stir fries.

A vegan friend roasts it.
I am afraid I can't bear the deep fried spongy stuff. It actually put me off tofu for ages.

So, I am not very adventurous althlough I do actually have a tofu cook book somewhere (called "I Can't Believe it's Tofu"!), as well as quite a lot of vegan cook books. I should try harder.

i rather like the dried tofu knots and sticks, rehydrated to used in stir fries - they give a chewy texture that is sometimes missing with veg options.

I'm often not a huuge fan of Yotam, but I do like the look of the black pepper tofu - tofu is perfect for spice overload. And Meera Sodha's chilli tofu looks good too.

Very interested in the dried forms, Scullion - seen it often but never tried. What is the soak time or will it rehydrate in the cooking?

I just remembered I’ve made a couple of things with dried yuba (tofu skin) too. I’ve only tried it in fried rice type stuff so far.

strangely, the knots seem to hydrate quicker than the sticks, which are of a more open nature. although saying that it may be that the ends, where the rolled skins have obviously been draped to dry on a bar (like spaghetti) and are much more dense are the bits that take longer to rehydrate.
i usually put them in a jug with water and a bit of dark soy for maybe ¼ - ½ an hour - i tend not to think about the time - it's as long as i take to prep the rest of the stuff and maybe make egg fried rice.

There's another Ottolenghi tofu dish that I did make. Noor's black lime tofu. The flavours were wonderful, and oh, the smell when you grind up the black limes! You deep fry the tofu (essentially) and I am not keen on it, as I said, when it has the texture it thus acquires. But if you like tofu that way, it's worth doing (if only for the limes. Anyone else know any recipes which call for pulverized black limes?!)

Reminds me I used to make picadillo from a different Moosewood recipe, but I’d completely forgotten until you reminded me

Picadillo is Latin American savoury mince, works well with tofu in place of meat

I can’t find my Moosewood recipe on line but it used tofu frozen, thawed and then crumbled to give a good texture

I found a recipe for tofu based Cuban picadillo that looks good

Mexican picadillo is a bit drier than the Cuban version and can be used as a filling in tacos etc, or of course burritos!

I love tofu, though haven't had it for ages since I've pretty much given up cooking.
My favourites are YO's black pepper tofu, mapo tofu, the sticks in either fried rice or Tom yum soup, or even just pressed, fried until crispy and dipped in satay sauce.
I can happily polish off a block on my own.
I keep meaning to give tofu scramble a go as I'm intolerant to egg and I miss scrambled egg on toast.

I've just looked these up and would like to try them. Where do you buy yours? I can see them online but don't usually buy food online. A Chinese food shop perhaps?

Yes, the difference is that the picadillo I used to make from Sunday at Moosewood was made with tofu frozen then thawed to alter the texture, not tofu straight from the packet

MagicMarmite - as you've made the Ottolenghi black pepper tofu - it calls for 5 tbs of coarsely crushed pepper - do you find that a lot or is it just right?

The Noor's black lime tofu recipe looks amazing, herbidacious. Have you looked at his Iranian vegetable stew with dried lime?

I don't suppose you can recall the title of the recipe ( you know, Mexican Tofu or whatever?). I'm asking because I have the Sundays at Moosewood open in front of me and can't find anything with Picadillo in the name. :?

Sorry, it obviously isn’t Sunday at Moosewood, though that does include the instructions for frozen tofu, it’s a long time since I’ve made it and Sundays is the only Moosewood book I now have


I’m pretty sure it was a Moosewood recipe though, or just possibly a Mollie Katzen one, from The Enchanted Broccoli Forest or one of her other books

It was a long time ago …

Edited to add that I’ve done a search and there’s a Cuban picadillo recipe in The Moosewood Restaurant Table, but I can’t tell if that uses frozen tofu, I may have conflated 2 recipes or got it from somewhere else I suppose

No worries. I was going to post the recipe if I could find it as other posters are keen learning new ways with tofu.

We have all the Moosewood books....except The Enchanted Broccoli Forest!! Sods Law the picadillo recipe is in that edition.
