Meal Plan 17/09 – 23/09
• Fri- breaded cod, baked spud, green beans, peas
• Sat – Chilli cheese pork burgers, salad, corn, wedges
• Sun – Lamb, cauli cheese, carrots, green beans, potatoes, gravy
• Mon- Butternut squash, sage & parmesan risotto
• Tue – Smoked haddock, corn & bacon chowder with garlic bread
• Wed –Jalfrezi chicken bake
• Thu – Bejewelled pork, rice & beans, salad
Nothing setting heather alight this week but delighted that DS2 has finally agreed to try the butternut squash risotto so a new one to him. He used hate sweet potatoes but likes them now so I'm hoping he'll be the same with BNS which to date he'll only really eat in soup.

It's a Jamie Oliver recipe from the 7 ways book. Unfortunately it doesn't seem to be online.
Basically you fry lots of thinly sliced garlic and rosemary needles until golden and crispy. Remove from the pan then fry pork fillet (I usually use pork loin steaks instead). Once cooked coat the meat in bbq sauce and use the garlic & rosemary to "bejewell" it. The rice is 1/2 mug of basmati, mixed with a mug of boiling water, a pinch of and a tin of black beans (inc juice) cooked uncovered for 12 minutes then covered, removed from the heat and left for 12 minutes. Serve with salad
It's one of our go to recipes from the book for a quick & tasty mid week meal.

It's lovely though very garlicky. Initially when I read the recipe I wasn't that sure about it but DS2 was keen to try, I'm glad we did.

• Sat – scampi, baked spud, peas & green beans
• Sun – roast chicken dinner
• Mon- butternut squash, sage & parmesan risotto (rolled over from last week)
• Tue – sausage and butter bean casserole Easy sausage casserole recipe - BBC Food
• Wed – pasta with tomato sauce, pesto and chorizo
• Thu – Thai green chicken & veg curry with boiled rice
• Fri- takeaway or freezer raid
• Sat – scampi, baked spud, peas & green beans
• Sun – roast chicken dinner
• Mon- butternut squash, sage & parmesan risotto (rolled over from last week)

Monday - gnocchi baked in a tomato , courgette and pepper sauce with cheese on top before baking .
Tuesday - beef stew , no frills , just nice and simple with a crusty roll
Wednesday - vegetarian burger , homemade oven chips corn ok the cob and coleslaw
Thursday - campfire stew to take to work

Things are going to plan so far this week though I might swap today's planned curry with tomorrow's cauliflower and macaroni cheese. I'll see what DS2 thinks when he appears for lunch.

Spoke to soon lol, DS2 is now out tonight and tomorrow. Curry made yesterday will be frozen for next week!

I like the look of the sausage casserole ltc. OH doesn’t do butter beans of course but I could make it for the family on one of my cooking nights. Thanks.

It's not one I've tried before but looks good, it may get bumped (again) though as I'm potentially out for lunch and it's a freezer/store cupboard dish. I like to have one or two "expendable" lol meals on the plan each week!
I'm sure other beans or even baked beans would work if OH likes those.
