Oh no dennis how frustrating
That sounds delicious Sue
I kept dinner last night very simple. Fried a couple of flat mushrooms, toasted a ciabatta roll and quickly cooked a bashed out piece of well peppered bavette. Simple sauce of the meat juices, a knob of blue cheese and a splash of red wine. It was delicious.
Jerk spiced chicken wings and roast veg tray bake this evening.

It's the Black Dog https://www.blackdogbeerhouse.co.uk/
A huge selection of ever changing beers for those that like that sort of thing and really great food.
OH is away and I met a friend for a glass of wine after work yesterday so just had mashed potato and a huge pile of broccoli and a bit of gravy.
I'm at home today and it's raining so I'll have what's in the fridge for lunch - there a quarter of a quiche and a bit of tired salad. Inspired by LTC, I might venture out of it stops and get some big mushrooms for dinner tonight. Or toad in the hole....

The jam looks very set Dennis! I've had jam which took a while to set and surprised me too.
Re: What's everyone cooking this week? 2
i think we may all have! i have both some cherry jam and some kea plum jam that didn't show a good wrinkle but when cool could almost be cut up and made into sweets. i could do a re-boil but i really can't be arsed. it goes as filling for oat slices etc.

Oh that bavette ciabatta looks/sounds good!
We had steak over the weekend...on a rare night out just with OH. We shared a tomahawk which was delicious. However it was cut at the table by a lovely young girl of about 18...it took her aaaaages which meant the sides were all going cold. I felt sorry for her and at one point I just wanted OH (ex chef) to take over! Anyway, it was worth the wait and she was very enthusiastic bless her
On Sunday we had prawn madras with rice, naan and garlic spinach.
On Mondays the girls take it in turns to pick a quick dinner for after swimming. Eldest chose those stand and stuff tortilla boat things filled with piri piri chicken and peppers. With chopped lettuce, pico de gallo, lime, grated cheddar and sour cream on the side.
I think tonight we are having grilled salmon on a pea and leek risotto.

Lusciouslush wrote:This is the Bang bang sauce I use - pretty easy to put together & very good over allsorts - salad/noodles/pasta etc. don't see why you couldn't use it as a dip.
5g/2½oz crunchy peanut butter
1 tsp toasted sesame oil
1 tbsp soy sauce
1 tsp runny honey
1 tsp rice wine vinegar
½ tsp finely grated garlic
½ tsp finely grated fresh ginger
I have saved this - thank you! OH often takes a rice pouch to work with whatever veg bits we have in and this sounds great to have ready in the fridge to add to it.

Definitely set now Dennis
Your meals, as always, sound delicious OMCO.
Pasta with some of the batch of pesto I made yesterday plus probably mushrooms, bacon and green beans.

How on earth did you come across it, Rocky? It's not exactly on the beaten track!
Re: What's everyone cooking this week? 2
Someone at the Bell and Crown told us it is a hidden gem - and it is. It seems to be becoming very popular. I am delighted for them, but I don't want it to become so popular that it is hard to get a table!
Re: What's everyone cooking this week? 2
As we are low carb at the moment, I'm being careful about what we eat.
Yesterday was a gardeners' pie (as opposed to a shepherds one) as it contained a lot of veg; very low far mince with carrot, mushroom, onion and garlic, topped with celeriac mash. it was delicious.
I can neve get a smooth mash with a masher, so after boiling the celeriac, I mix in a dollop of 0%greek yogurt and a spoonful of horseradish, season well and give it a zizz with the hand blender. Result? Perfect mash! We had it with courgettes.
Tonight, it's Spanish chicken, with a good slug of harissa and paprika. It'll be served with steamed cabbage and... yes, courgettes!!
I am also sold on chia and buckwheat ryvita. That's lunch sorted.
Dennis, how easy it is for jam to do its own thing. It takes so long to get to its set and a relatively short time to destroy itself.

Too true! Probably five steps from hob to freezer. I was half way across to put cold plate in and smelled the burning…….
Thanks for all your comments.

I've made at least my share of lumpy, watery or gloopy mash. If it matters I use a ricer these days; if not, a hand masher and accept the occasional lump.

Last night I wanted a small amount of mash so I cooked 2 under sized baking potatoes on the jacket spud setting of the combi oven then put them through the ricer
If I want to make smooth light French style pommes purées I boil the spuds, dry them over the heat to make sure they are really floury, add milk and butter and heat, then beat with the hand mixer

Yes, I'm sure lumpiness comes largely from rushing either the cooking or the drying.
Re: What's everyone cooking this week? 2
I'm fine with lumpy mash when it is just us!
There was no veg to be had in the shop yesterday but I found a few leeks in the cupboard I had forgotten about so I had sausages and a kind of leek sauce / stew. Sounds awful but was actually nice. On the assumption that the shop will have veg today tonight will be salmon and veggie noodles - possibly using a mee goreng paste that we got in the tiny shop.

yesterday I boiled the carcass of the Sunday duck to make some duck and noodle soup, It's in the freezer until I get some bok choi to add. Also I made a vat of ragu sauce with the last of the tomatoes which is also portioned and in the freezer.
