Horseradish is good with smoked mackerel, if you like it.
I'd a agree or a few drops of tabasco added to the mix. Dill and diced capers might work well.

The baked feta is such a good idea. I think someone mentioned it on another thread and I tried itnwith a half block I had left over. I think I kept it in foil the whole time. Did you wrap yours in foil, LTC? And if so, did you open it at any point?

No I didn't wrap it just nestled it on top of the bed of veg. The top browned nicely but the underneath was soft and creamy.

Cheers Sue, that's pretty much what I did though used fresh chilli. I do think the dish I made benefitted from the small amount (about 1/2 a cup) of tomato sauce I added or for my taste it would have been too dry and creamy. I used about 400g of tomatoes and 1/2 a block of feta for the two of us. I used one medium sized red chilli (jalapeno I think from a supermarket generic pack) and that gave just a pleasant amount of heat without it being overly spicy.

if I go to Lidl I buy their own brand Greek feta, which is the one I use in cooking things like spanakopita, very good flavour, and I think it's less crumbly than many posher brands, so might soften nicely when baked

The baked feta pasta thing I think started off on Tiktok and became quite a craze .
With the smoked mackerel patties , I’d look at the proportions of fish to potato . If there’s too much potato , it’ll drown out the mackerel. I agree horseradish goes very well with it . Otherwise I’d go for a squeeze of lemon and heavy on the black pepper

Thanks PP so basically marinated for you. I think I'll stick to my Tesco own brand one, DIL-to-be gives it the thumbs up, and chose my own marinade.

had a really nice, easy, light meal at our daughter's.
melt a block of feta in a large pan with a crushed clove of garlic, the juice and zest of a lemon and a load of black pepper. when all creamy, put in enough courgetti for four people and stir until the desired level of firmness/softness is achieved.
it was delightful.
and used up a load of courgettes...
