Re: Foodies In The News
I have not been keen on the couple of clafoutis I have had, the style of the dish is to undercook it for my taste, Felicity says "creamy" but to me it's half raw as the fruit juice seems to stop the batter cooking properly
Three tablespoons of kirsch might go a long way to ameliorating the effect mind you

Never thought of baking sardines like that, will give it a go
I butterfly sardines by an entirely different method, I will have to do a comparison to see which is easier

I love sardines. I noticed Waitrose had loads of Cornish ones on their fish counter this morning. I think I will have a go too as OH likes them - or did last time I asked.

Apparently a cousin of the clafoutis. I adore greengages.

Re: Foodies In The News
i have a recipe for lamingtons that was given to me in the late seventies - i have yet to make it. they don't figure high on my cake list - i'm not a fan of cake with sweet stuff on the outside
however, if anyone has the recipe for the mandarine gateau that i was also given in the seventies - and used to make quite often before the piece of paper it was written on disappeared in a 'tidying' effort by my mother - i'd be really grateful.
i have searched online to no avail. i think the raw egg 'problem' possibly put paid to peoples perception of pasteurisation potential.
(how's that for alliteration‽‽)

Re: Foodies In The News
lamingtons don't appeal due to coconut, but I've been looking for a good buttermilk cake mix, my recipe was a panel on the side of a butter milk carton, and though I kept it carefully it escaped from my scrap book. Pritt being unabl eot hold waxed card I think
As Felicity said for lamingtons, sometimes you want a cake that is nice to eat in it's own right, but has the strength for the decoration, or in the case of my original, for a pineapple upside down cake

Lamingtons are highly overrated IMO.
I had a mandarin gateau recipe for years but can't find it. I think it went out in the last recipe cull as I'd never made it. Can only find 'Tipsy Mandarin Torten' which is chocolate sponge topped with a mixture of cream, Grand Marnier and marmalade decorated with mandarin segments and surrounded by Langue de chats biscuits. Very 70s!
