Made a carrot cake today, for the first time in I can't remember how many years!
I used this recipe: https://www.bbc.co.uk/food/recipes/carrot_cake_29800
Made half quantities, and cut the sugar by a quarter - ie 75 g instead of 100 g that would have been the full half size. I didn't have any walnuts and used some flaked almonds instead, to add a bit of texture.
I used a one pound loaf tin and had to bake it at 160 degrees fan as there was something else in the oven at the same time, but did it for about 45 mins.
It is scrumptious!
I made a small bowl of the orange cream cheese topping, and we just spread it on our slices of cake rather than spreading it over the whole cake and then cutting it into slices. I didn't really measure the icing sugar - just sieved in a heaped tsp and didn't bother with any extra butter as I wasn't using it as a propeer topping.

That looks gorgeous Amy, lucky clients.
KC I often used to make a "Bugs bunny" loaf cake when my boys were small (DS1 only liked raw carrots at that point) and used to leave it un-iced. The kids used to have with ice cream or fromage frais. If it got a bit stale (not often) a slice toasted topped with butter and rhubarb jam was a "mum treat"

The carrot cake sounds delicious and the strawberry cake looks wonderful. It must be cake Sunday!

It’s actually a cheesecake so melted white chocolate is in as part of the filling EM

Just had the third of three poor bread bakes. The first was overbaked, and mentioned on here recently because I forgot to turn the oven down. The second was when i did all that right, however, the timer was set for the time, but not turned on. So baked a bit longer than planned. Today I was in a rush to get to the shops before they closed and somehow the oven door wasn't fully latched, so the the temperature was actually lower than set. Bread is a bit doughy, but just OK. Maybe a lot of toast this week...
Must try harder
Tomorrow we are in charge of the grandchildren. I hope to get some bread rolls made with them, and, if time, some peanut buddies.

Thing happen in threes aero so you'll be ok now. How lovely to be baking with your grandchildren. Are Peanut Buddies a kind of peanut biscuit?

Peanut buddies are from a recipe posted on one of the forums, possibly back at the BBC, by, I think, Stokey Sue. They are a traybake, with the sponge base enriched with peanut butter. Then chopped chocolate added in the mix and melted on top once out of the oven. If cooked to the right amount, the base is similar consistency to a Bakewell tart.

Found a picture on-line. Not one of mine.
I have always used dark chocolate, but I've been instructed to make milk chocolate ones with grandchildren.
Granddaughter has just finished her first year at school and is keen on baking. Grandson is nearly three and will be "helping"!!

Amber, your cake looks amazing I think your clients are a very lucky lot to have you cooking for them!
I don't like white chocolate but don't think I've had it in a cheesecake, although I've seen a few recipes that use it.

Here goes!
Chocolate Peanut buddies.
250g Peanut butter. Smooth or crunchy whichever you prefer.
85g Unsalted butter.
280g Caster Sugar.
125g Plain Flour.
3 Large eggs.
I tsp Vanilla Essence.
350g chopped chocolate. I use the bags of chocolate drops, or chunks. I prefer dark, but the grandchildren demanded milk.
Pinch of salt.
Cream the peanut butter and butter.
Add the sugar, eggs and vanilla essence and whisk into the mix.
Add the flour and salt and beat in.
Stir in approx ⅓ of the chocolate.
Tip into a tray about 12" x 8" (300mm x 200mm) Swiss roll type.
Bake at 180ºC (160-ish for a fan) for 25 - 30 mins until the edges start to go golden. Check it's done with a skewer or knife in the middle.
Once out of the oven melt the rest of the chocolate on top, using the heat of the cake. Leave in the tin to cool for 10 mins or so, then complete the cooling on a rack.
Cut into squares or fingers, or whatever. Any size you like.
Here's todays, with a few white choc bits sprinkled on at the last minute, just for the kids.
