Smoked!
I’ve received a lovely birthday present from the Weald Smokery courtesy of my sister. It’s the Smokery Deli pack.

I can’t remember ever using smoked chicken breast before. It’s huge. Any ideas please?

Re: Smoked!
in hot weather like this we used to get the Moy Park whole smoked chickens, and serve with a mango salsa (this is not an original combo, it's quite well known)
Mango salsa is dead easy - diced fresh mango (can get a little pack of prepared and chop finer), add lime juice, salt and a little shredded fresh chilli plus red onion and/or coriander leaf if you fancy it

Re: Smoked!
How fabulous!
They sell smoked chicken breast at a posh deli near here. I enjoy it just with a good salad (the sort made up of one's favourite things!).

Re: Smoked!
As others have said, in this weather I'd just have it in a salad, or perhaps a sandwich with a fairly delicate chutney or flavoured mayonnaise and a few salad leaves.

Re: Smoked!
And now I have received another smokery present, this time from Emmett's in Saxmundham, Suffolk. 4 different varieties of bacon including Suffolk Black Bacon. It looks wonderful. Thanks Best Friend!!

PS, I know many things to do with bacon but thanks for the smoked chicken ideas.

Re: Smoked!
We used to get smoked chicken from Poynings on the Sussex Downs when we were driving back from visiting my brother in Brighton. Waitrose used to sell it - I have no idea if they still do.
We absolutely loved it, usually with salad, nice if you mix in some fruit - that is, if you've got a sweet/salty weakness like me! Peaches, nectarines etc.

Re: Smoked!
Smoked chicken in or with brown rice that has a bit of: fruit like peach, apricot or orange/mandarin, raisins, nuts like walnut, mint. Dressed rocket if leaves desired also.
Lovely gift by the way

A favourite salad here is lettuce, cold blanched green beans and peach in a mildly garlicky vinaigrette

Re: Smoked!
A local restaurant here sometimes does a lovely starter of smoked chicken served with watercress and a fruity, nutty slaw with a mildly curried dressing.
Re: Smoked!
What lovely suggestions to have with the smoked chicken breast, which I have never tried, but I used to call in at this place occasionally and I used to see them at farmers markets.

I took a smoked chx. to Rhodes, it lasted me for about 9 meals and the carcass made a terrific stock. The ckx was originally bought in France last French trip and had been in the DF a while. Tasted delicious.

Springs still do the smoked chicken - whole or breasts & duck too, plus online deliveries We drop in there frequently as it's a nice drive out & near work - they've stopped doing smoked eels which were wonderful

That's interesting, were there always two smokeries in the area, or did Springs emerge when the one at Poynings closed?
I certainly didn't know about its existence 30(+) odd years ago ...

Re: Smoked!
Springs is the only smokery that has ever been in the area KC2 - it is in Edmonton - a tiny village ( near Poynings) where they do all their own smoking & have a twee shop on site - blink & you'd miss it. It's family-owned & been there since the early 60's.
