I am always slightly surprised when I remember how few French crudités are actually “cru” (raw). Raymond’s recipes look good, but a prep time of 5 minutes sounds very optimistic to me for the first two

Yes, it's really awful, isn't it - I read something about it last year and sent it to DS2 (in California) who used to be very keen on almond milk ... but isn't any more!

Apart from the bees, almonds need a lot of water to grow and there isn't enough in California. It seems a totally inappropriate crop for industrial farming there for so many reasons.
I do think nowadays before using almonds for those reasons. On low carb diets they are pushed to death as a 'flour' source along with coconut flour and of course almond milk and its offshoots is huge for those who don't want to use dairy products (and IMO the nicest of plant milks). It's good to see that a sustainable standard is being g put in place but like so many other things, demand is so high without enough people caring that it just seems very worrying.

Both the salad and seafood recipes are great - but both remind me how lovely it will be to sit back and be served such things elsewhere again!

I do wish OH would eat kedgeree. He used to but it is, apparently, something that upsets him now. Strange how he has such a grasp on unsuitable food but not on real life.

My son's not a kedgeree fan, likes all the individual ingredients but not together for some reason. I made a version of it using orzo instead of rice once which was very good and he liked , would Tony like that Gill?

I wouldn't turn my nose up at any of the seafood plates I do wonder though why bothered to include the fish, especially the last one (highly embellished plaice). I'd be tempted to ask for the fish separately. On the upside, the dishes should work equally well with much cheaper fish if the flavour is barely detectable. Not the mussels which remain the star, but only six of them in the serving?
