Claudia Roden orange cake
Hello, have just boiled the oranges for Claudia Roden's orange and almond cake for our lunch guests tomorrow - I've often wondered if the boiling liquid can be used for anything?
I've always thrown it away but maybe I shouldn't and there's something fantastic waiting to be made!
Any ideas?

Could it be sweetened and reduced into a syrup?
And maybe stirred into whipped cream?

miss mouse, I used 2 small oranges - not much liquid to chuck!
AmyW, WW, yes, I was thinking that if I were making any jam or chutney or preserve I could use it and it might add a bit of a different taste - a jelly is a good idea.

Add the pulp of half a dozen oranges and make orange juice!

I'm confused. If it's palatable, why not just drink it? If it's not, you wouldn't want to do anything with it would you?

I think this is quite an interesting question. The versions by Nigella, Mary Berry etc all 'discard' the liquid. It's quite a concentrated liquid as the zest has been boiled so not a juice to just drink. The only thing I can think of, if it's too bitter for gelatine (or similar) set jelly is to freeze and add when making marmalade but I'd taste the liquid first. Does it set on it's own when chilled?

how about freezing it in cubes and adding it to a gin and tonic or such like?

It's been a while since I made this cake but did you use unwaxed oranges?
If waxed, I would chuck the liquid away.
If unwaxed were used, then taste and save for G&T as already suggested.

Binky, they were waxed - I couldn't get any unwaxed - but I scrubbed them with hot water and a drop of washing up liquid - which I obviously washed off well.

Out of curiosity, did you taste the boil water, KC2, or was it the orange aroma that made you wonder about using it? Reason I ask is that with the exception of Seville marmalade, most recipes that boil citrus skin to be used as an ingredient, boil it and throw off the boil water to remove bitterness etc.
I haven't made the famous orange cake, although many friends and people I know have, so I don't know how aromatic the boil water is. Might make a pleasant addition to a bath, possibly with other complimentary bath oils or salts.

ZC, you really should make it. It never fails! The only thing you have to be a bit careful of is that it doesn't get too brown on top. It happens in a trice! One minute it's fine, the next it's slightly over!
I did try it and it was a bit bitter, but not too bad. In the end I chucked this lot but might be a bit more organised next time and perhaps get in a few limes/lemons for some marmalade. I think if I'd managed to get unwaxed I'd probably have been a bit more intrepid.

I should and I will, KC2! Then I'll also have the boil water dilemma! I have a 3lb bag of ground almonds to use from the pantry - lockdown supplies - the almond chocolate torte I made a couple of weeks ago barely made a dent. Re marmalade, I use grapefruit and lemons as a Seville substitute but extra orange zip would not go amiss.
