All about halibut...
What is a single serving weight of halibut please and at roughly what price? Also, how to obtain it (supermarket reviews aren't encouraging) without buying a £50-worth fish from an online fish merchant. Chef portions on TV look miniscule (about 2" square) but maybe that's normal.
Ta.
The fish was mentioned just now in another thread. Not sure if it's something that's more available to coastline people than townies or they have to fight if landed fish is all snapped up for restos or pre-order suppliers.
It's something I've never had, so about time! I had turbot in the days when it was affordable and available, but not halibut, so keen to try it one day.

It's £7.50 here for a 170-200g portion from one of the local fishmongers if that helps https://www.pieronis.co.uk/product-page/halibut-fillet

Our large Waitrose often has halibut on the fish counter and I’ve occasionally seen it in the Pinner M&S food. No idea re weight though.

Most of the places I´ve worked with serve around 150 - 200 gms of fish per portion, depending on how generous they are. Can´t help you on prices, however.

Re: All about halibut...
I have just seen an online suggestion that 160g is a recommended portion - I think ltc's portions would be nicer!
We have various 'farm shops' with good fishmongers attached here and I have seen it - and bought it at these where it looks enticing. I haven't looked in supermarkets (where I only look at rtc fish and it's never halibut!).

Re: All about halibut...
Beware - Greenland halibut is not halibut; it's related, and it's a nice fish too eat, just don't think you are getting a bargain if it seems much cheaper than halibut
The Fish Society think 300g is 2x medium portions and will charge you £16 for that, wild halibut

I always find them a useful reference for what it looks like, and their prices are always the very top endo of what I'd expect to pay so that gives one a clue

I remember doing a catering event in 2017 with one of the local Country Clubs. The sous-chef said they usually portioned fish into 150 gms pieces, whereas meat and chicken were around 125gms.
My kid´s BBQ portions are around 600 gms....

I take it your kids are small eaters KK I'm always amazed/impressed by how quickly my "boys" can demolish a whole fish, chicken or piece of meat especially when BBQ'd and they are well past the "hollow-legged" teenage years

Hahahaha, LTC!!!
You´re right. When we were in Mexico last year, I watched them plough through 16 0z steaks like they were packets of crisps.

i don't think it's the sort of thing the local fishermen would be likely to land - it's on the endangered list and would be difficult to deal with on board - one fish weighs over double my weight!

Interesting article. I believe most that is found in fishmongers etc. is farmed https://www.gighahalibut.co.uk/ . Some other sources are also regarded as sustainable https://www.msc.org/what-you-can-do/eat ... at/halibut

You may love him or hate him - but you´ve got to admit, this is masterful.

I'm not keen on him when he's in shouty mode but he does know his stuff, impressive filleting.

Filleting a fish really is worth going to classes for isn't it!

Yes probably if you are going to be prepping a lot of fish though lots of good demos online. My Dad taught me (he used to work in that sector) and it's mainly quite straightforward, though I'm not great with flat fish. I taught my kids, my younger son is now much better than me - a summer of doing fish prep at the hotel where he worked as a kitchen porter tends to do that lol and he's a keen angler.

I did a Rick Stein course many years ago - it really is worth doing. I also recommend buying a fish filleting knife from your local fishing tackle shop and not a cookshop. Far cheaper - I paid a fiver for mine nearly 20 years ago and it is still going strong.
