Fresh fennel in a seafood stew, containing langoustine
Re: "Food Pairings Dominoes" 2
A heap of griddled freshwater langoustines,, served on a bed of freshly gathered wild greens and herbs, and dipped into freshly made LEMONY MAYONNAISE
(eaten at a little family restaurant in the hills above Florence over 35 years ago, and still remembered vividly )

Lemony Mayonnaise with cold chicken
Re: "Food Pairings Dominoes" 2
Tikka marinated then cooked chicken breast, sliced crosswise into medallions, with raita in a pita bread or wrap.
So tikka marinade.
So tikka marinade.
Re: "Food Pairings Dominoes" 2
Tikka marinade used on salmon or HALIBUT, served with salad and a pomegranate raita.
Re: "Food Pairings Dominoes" 2
as no-one's doing anything with the halibut (atlantic halibut is on the endangered list and pacific isn't getting here cos of covid restricted flights) i looked up a recipe.
the bbc good food site has a recipe with red wine, bacon and mushrooms.
it seems like most of the recipes have big flavours added - which makes me wonder why not have the cod or haddock, that they suggest as an alternative, instead?

Whole shallots, whole baby potatoes, rosemary, EVOO, balsamic vinegar, all mixed and tray roasted. Optional garlic. (Might need to halve banana shallots.)

PS re halibut: I couldn't figure out why you'd drown halibut, although in the US it is/was just a white fish, nothing special or pricey. Doesn't explain UK recipes though.

Date molasses
Re: "Food Pairings Dominoes" 2
dates, softened with a bit of water to make a soft paste (is good with apricots, too).which is then sandwiched between 'four square crunch' containing
100g porridge oats
100g flour (100 or 80%)
100g veg margarine (or butter)
100g brown sugar
melt fat in large pan, stir in sugar, oats and flour with wooden spoon.
spread with heel of hand into greased tin bake in coolish (150°c) oven for aprox 20 mins until firm and lightly golden. mark into squares but leave to cool in tin.
or spread half of the mix, firmly, into tin, add a layer of jam, mincemeat etc then remaining mix, pressing down firmly before baking as above.
makes a good crumble topping, too.
oops, sorry moira!
but i'll leave the recipe here as it's good, easy and quick.

Windfall apples or other LESS THAN PERFECT ORCHARD FRUIT with Molasseses or Dark Muscavado sugar in chutney
Re: "Food Pairings Dominoes" 2
Orchard fruit is a very good sour-ish foil for filling or dressing sweet Pavlova, so egg whites.
Re: "Food Pairings Dominoes" 2
whisked egg whites folded into the cream cheese/sugar/flour/yolk/lemon juice and rind, and sultana mix, on a thin sponge bottomed, thick, baked cheesecake.
