Frozen panna cotta
Reporting back - a huge success.
Thawed out yesterday and eaten last night.
Silky soft, no splits whatsoever, no watery leaks and flavour and texture unaffected.
We will definitely do this again.

Your experience has made me brave enough to try freezing the ramekins of lemon posset that I have leftover from our first family dinner since Christmas - we were also eating a chocolate dessert from Aldi which had been in the freezer since the aborted Boxing Day meal, and no-one wanted two desserts.

When I used to batch cook for mum's freezer I often made raspberry posset, served a few portions and froze the rest.
In bird-size helpings
It wasn't much like a posset when thawed, more like a classy ice cream.
Perfectly edible though.
