Big onions cut almost through into eighths, sprinkled with parmesan and baked to open like flowers to eat with a melted cheese (of choice) dip.

i'm going for a specific melted cheese rather than making a fondu if that's ok?
grated parmesan, placed in little piles on a plate and melted in the microwave for a minute (it may be less) to make parmesan crisps - eaten as is or with a sour cream and chive dip.
take your choice.

Anchovies, halved lengthwise, and formed into a lattice on top of...

... a base of flaked cooked cod, tuna, mayo gently mixed, with a necklace surround of little gem leaves each with a quartered hard boiled egg piece, and a halved black olive in each anchovy lattice square.

I'll go with black olives.

PS That's probably a mistake, as it's the eggs that anchovies add zing to. Oh well.

seems like no-one knows what to do with mackerel paté as an ingredient (i wouldn't either...) so how about blobbing it into a lettuce leaf cup?

Edited to ask who’s pinched my egg ... it was there earlier ... I just put it down for a minute and there it was ... gone!!! :shock:
