Half fill a glass with ICE. Add juice of half a lime and half a lime cut into wedges, squeezed or pressed in the glass, add several bruised mint leaves, add a little brown cane sugar, rum and and a squirt of fizzy water. What is a Mojito?

Posh fish pie made with LOBSTER

Here's the chicken hymettus recipe ZC

NB the chicken has to be very fresh as it needs to marinate for 2 or 3 days

4 chicken portions (I use skinless, boneless fillets) cut in half and pricked all over with the point of a sharp knife or skewer
finely grated zest and juice of 3 limes
good pinch of saffron strands
25g butter
4 tbsp corn or sunflower oil
2 tbsp clear (preferably Greek) honey
2 tsp chopped fresh thyme
2 heaped tbsp chopped fresh mint
s& black pepper
25g flaked almonds

Put chicken in a shallow dish, sprinkle over the lime zest and juice, cover and leave to marinate in the fridge for 2-3 days. Turn it in the juice twice a day.
Soak saffron in 4 tbsp boiling water for 20 minutes then strain, reserving the liquid.
Melt the butter and oil in a large frying pan.
Remove the chicken from the marinade and fry until golden brown on all sides.
Mix honey with saffron liquid and any remaining marinade then pour over the chicken.
Add the thyme, half the mint and s&p.
Cover and simmer for about 45 minutes, until the chicken is tender, basting occasionally.
Just before serving, toast the almonds under a grill until golden and then mix with the remaining mint.
Put chicken and juices in a serving dish and sprinkle over the almonds and mint.
