When I lived in Italy, I found that quite a few people used 00 flour for bread.
I bet your kitchen smelled divine!

Delicious.
I would never worry about the top cracking - it's just doing its breadly bake thing. Which varies recipe to recipe.
You could sprinkle the top of a loaf for heat protection with flour I suppose.

I know it's late but I've only just eaten breakfast. Toasted white bread with butter and Tiptree strawberry jam, which was really very nice. The texture is definitely softer and it's something I prefer anyway. Mother, who was no sort of cook, only toasted one side of the bread in the high-level grill when she was making toast, and I got used to it I suppose.

Binky, same here - my mum would buy the very thinly sliced bread, so I'd toast two together as if one slice
Does the bread keep soft any more or less time than other flour? I'm thinking that French bread tends to be day only, so wondering how it compares.

We've been keeping an eye on the white bread and it isn't showing a tendency to dry out, as would a baguette for example. More lovely buttery toast this morning, and tuna salad sandwiches for lunch.

Seeing how successful you others have been using 00 flour for bread, I remembered that I had a bag of this and thought it was best used for pizza, so it never got used up.
So, today, I thought I would give it a go, especially as daughter has to go on a low residue diet tomorrow (meaning white bread amongst other things).
The dough didn't rise as much as with other flours I have used recently, but I ploughed on .. I started it off in my bread machine as I always do, and, after the initial rise, I knocked it back and gave it another prove for an hour, then into a 180o C oven for 45 mins. I use this temp and time for all my other breads, but this loaf stayed worryingly pale, so I gave it another 10 minutes. The colour didn't improve but the crust seemed exceedingly hard.
Once out of the oven, I left it for a while and had a sample slice. Hmmmm It tasted very bland and the crumb is a bit stodgy - certainly not the best loaf I have made recently.
Perhaps it had something to do with the BB date being some time in 2013 do you think ?

In case people haven't seen my post in the Bargain section, the 00 flour we prefer is now being discontinued at Tesco. It's down to 18p a kilo.....we made waffles with it this morning and thought they were our best ever.

I made a small blob loaf about 300g which turned out fine. The crust kinda wasn't a crust, but crumb was cooked through and not sad or whatever. I'd shield the top next time as the top was threatening to burn.
