Sea salt and CARAMEL in the fab chocolate and salted caramel mousse we had from COOK for OH's birthday yesterday. It was DELICIOUS!!

Do tell KC2! And wouldn't mind Scullion's garlic and sorrel soup info either Great sounding dishes and combos always pop up in here - links or approximations of recipes would be good. Almost posted a couple for the tamales and salsa verde but then didn't.

Here you are, ZC, my amendments from my friend's original recipe are in brackets along with half quantities, which I usually make in a quite deep 6inch dish.
Vanilla white chocolate cheesecake
150g biscuits (75g) (I always use ginger biscuits as they go so well with white chocolate.) Blitzed to crumbs or near enough. (Friend’s recipe originally used double choc chip.)
30g butter (15g) melted and cooled slightly
Filling
2 X 180g soft cheese (180g) – must be full fat
50g icing sugar (25g) (less is also fine)
250g white chocolate (125g) (I’ve found that the quantity isn’t crucial.)
Mix biscuit crumbs with melted butter and press into loose bottomed cake tin. Then put in fridge for at least 30 mins to set. (If I’m in a hurry I pop it in the freezer.)
Mix cream cheese and icing sugar in a bowl. (I add at least a couple of teaspoons of vanilla essence too.) Melt the chocolate gently over a saucepan of water. (I do it in the microwave.)
Once melted mix with cream cheese mixture and spread over the biscuit base.
Leave in the fridge until ready to serve and cooled and set.
Decorate if/ as you like – berries, more choc, whatever you have to hand and want to use.

Shaoxing wine with cornflour, salt, white pepper and EGG WHITE to velvet chicken for a stir fry.
