tried and tested rhubarb suggestions

I just chopped up this:

and it amounts to a large colanderful.

I have googled, but wondered what people like most beyond rhubarb crumble, pie and frangipane tart. It's a pity I'm dieting but... there's not a lot of room in my freezer. (I should be able to freeze a bit, especially if I cook it first.)
If I had the time and a bigger family, I'd make a rhubarb and custard poke cake.

Also now it's cut, do I need to cook or freeze it straight away, or could it wait until tomorrow? I guess it could, in a plastic box, but maybe not ideal?

we were given a massive armful of rhubarb some years back - i made rhubarb wine - it was wonderful.

I'm not eating cakes/puddings regularly, but my rhubarb is prolific. I just cut it into thumb-length pieces, lay it in a single layer in an oven proof dish, sprinkle with sugar and roast until tender (about 20 minutes at 180C). If you handle it carefully the pieces will hold their shape. Eat with unsweetened yogurt.

I never freeze rhubarb - I keep it strictly seasonal. I can't imagine cooked rhubarb thawing well.

Thanks. Wine isn't really an option, Scully ;) (Not keen on making jam either.)

I really like the look of the Rhubarb and Orange Cake with Flaked Almonds, Suelle. It looks quite straight forward too. I have everything save the orange, so might do that tomorrow. That will leave me with jusst over 1.5kg. I suppose cook some and freeze that for impromptu crumbles. (I have already frozen a batch of raw.)

And maybe make something else. I am going to have to have dessert for dinner some nights :? I suppose I could make an extra dessert and freeze that too. Better than wasting it... I do wish I had more freezer space.

Stewed rhubarb is quite nice on porridge, with or without Greek yogurt.

I tend to just cut it in small batons, spread on a sheet pan after tossing with a little sugar and shove in the oven when something else comes out (or heat it to 190 C fan) then turn the oven off immediately and leave it until stone cold

This makes a nice rhubarb compote, not too wet, to eat with anything - custard, yogurt, cake, porridge, cereals

I will definitely try that method. I always seem to end up adding too much water when I stew it.

I make the rhubarb and orange cake a lot too. My mum discovered it some years ago.

If I didn’t freeze rhubarb we’d have to live on it for weeks. I only have two plants but they are very prolific.

We have made these muffins a few times recently, they are lovely and moist. We added flaked almonds to the crumble topping which was good.

Not very sophisticated but I love it whizzed up with a thick (cornflour based like Birds) custard and left to set cold.

Mackerel with rhubarb is one of my favourites - truly great combo, scant or no sugar. Could be one for your diet, herbidacious. Various versions around. I've made the Nigel Slater one slightly adjusted.

Clive, I did spot a rhubarb and ginger pie recipe, Pineapple sounds like an interesting addition.

I am vegetarian, ZC, but those look interesting.

I roasted some rhubarb as per Sue's instructions, last night, and it was perfect.

Rhubarb gin (as Suffs mentions) is fab and I'm a bit of a sucker for rhubarb fool too. However, whilst I know you're not keen on jam, my ultimate all time favourite jam is rhubarb & ginger so that's what I'd be making for preference. :yum
