Had computer problems recently so this post is a bit out of date.
Following the chat about Spelt flour, I baked a loaf, part spelt, part white (usual practice). Took a photo, lost it, but now it’s back, so here it is. I hope. Also includes the short handled stiff spatula I use for mixing. Don't use wooden spoons for dough.
Looks like that part of my system is working.

Is it me?
At present I am not baking but for years I baked bread twice a week. A family of six needs a lot of bread, cakes, etc. so I know how things work.
So. The sourdough thing. OH dislikes it but I am quite keen. But the supermarket stuff, however fanciful the packaging or provenance just doesn’t seem to keep well. Any tips?

Thanks both. I currently use a pottery bread crock. Not sure I could train OH to use a bag or beeswax. Also I don’t find a couple of sourdough slices freeze as well as normal white bread.

I'll probably get thrown out for being a heathen but something airtight should do it (plastic bag, plastic box etc). It won't 'breathe' and might lose any crisp crust but shouldn't go stale quite so soon. How long do you hope it will keep for?

Yes. I’ve been buying small ones since Josh left. OH happily eats bread with blue bits on however and baulks at my putting it in the compost!!

PP, if it's just OH eating bread, have you thought about slicing it and putting some in the freezer and then taking out 2 or 3 slices at a time?
Of course, maybe your OH would miss the blue bits ....

Yes KC2, but as per my original query I don’t find sourdough freezes well. And the other thing of course is his dementia. He likes familiar patterns and unwrapping a sliced loaf is part and parcel of his breakfast routine. Even if I defrost a couple of slices he won’t like the fact that the rest of the loaf isn’t in the packet. He was in a tizz this morning because I’d put the marmalade into a marmalade jar (because I wanted to send the dishwasher round).
I suspect I’ve exhausted any normal routines!

The only thing I can suggest is to save the wrapper from a used up loaf, cut a new loaf in half and freeze one half in said spare wrapper.
I appreciate you said that slices don't freeze well, but maybe half a loaf does if left to defrost in the fridge? Also, you don't say if OH is unhappy with defrosted sourdough bread (even if you are) if he doesn't know, i.e. if visually there's no sign of it having been defrosted.
I wonder if the "pretend" or quick-style bought versions keep longer or freezes better than the proper stuff, or vice versa? Open question, anyone?

I would extend that plan.
You can freeze sliced bread, but I would get some of the Lakeland "Easy Leaves" which are just plastic sheets to put between slices before freezing to keep them separate and allow them to separate easily.
Then get an old wrapper and fill the bottom with some foam or similar and put three or four thawed slices on top for him to take out in the morning.
