Wiltshire Cure bacon

Hi

I am trying to find a really good resource for wet curing bacon.
I've followed the advice on this video

however it doesn't mention weights.
Like the video I use a shop bought, center cut pork loin back.
The taste is pretty much like the Back Bacon in the UK but the meat when cooked is a little dry than when I cooked it in the UK.
Is it possible I should look for a better cut or cure it for less time before packing it to let the salts stabilise.
If anyone knows some good resources I'd really appreciate it.
Also I'm thinking of converting a whiskey barrel into a smoker, has anyone also tried this.
I like the barrel idea as it seems like less of a project than others smokers I've seen.

Ianinfrance who posted on here in the past, did a lot of bacon curing. He recommended a website or blog that specialised in that. I had a search but couldn’t find the link.

He also did smoking.

Maybe someone else here has the link?

yes, but there's a load more info and discussion on the links i posted - i thought it would be interesting to someone who may just be starting down that path to see how other people got on.

Been too busy with work to keep an eye on this.
