Ibarra chocolate
Question on ibarra chocolate
Any one in the group used it before??? Someday I want to do the soufle from the Mexican series but I little about the chocolate. Can anyone here offer a suggestion or two....

I googled it and it came a link with Amazon with how to buy it ? Seems pretty straightforward or just use the 70%dark chocolate offered as an alternative?

70% dark chocolate would work as Amy says, tho it's different from other chocolate in a few ways, Mark. It's usually used for hot chocolate and sometimes added to moles and other Mexican dishes and it's flavoured with cinnamon. Interestingly it also has a low cocoa solids percentage as it's sold as drinking chocolate - the Ibarra website says 30% and the sugar in the tablet chocolate is kept granulated and not usually eaten like dessert chocolate. It's pretty easily sourced in the US - Mexgrocer carry it on their websites and is available at Safeway, Walmart, Target, Albertsons, and a slew of other outlets. If you wanted to make the Mexican chocolate souffle, you'll probably want to get hold of Ibarra or another Mexican drinking chocolate. If not, I would use 90% dark chocolate and raw/golden granulated sugar (commonly used in Mexico) at 30% chocolate to 70% sugar with a bit of cinnamon added.
The chocolate souffle recipe says 12.4oz/350g Mexican chocolate, so 3.5oz/100g 90% dark chocolate and 9oz/250g raw granulated sugar and say a 1/4 teaspoon of ground cinnamon, preferably Mexican canela.

There are what appear to be two different types on the me grocery website. Either this

Is there a difference between the two or wouldn't it much matter?????? Drinking/hot chocolate?? To me that is like adding Nestlé quick to a recipe that calls for cocoa
