Ham hock or Pork hock ?

I managed to grab the last one of these at a local farm shop ... is Knuckle the same. All I know for certain is that it is uncured.

So, best recipes please ... Suffs, I think you buy these often ?

I love them (and I love the chewy skin but I may be in a minority there) ... for uncured pork hocks and knuckles I do a sort of northern European stewy thing, with dried peas pureed, carrots, celery etc ... and serve with sauerkraut if I can get it or white cabbage cooked with caraway seeds and a dash of cider vinegar.

I'll have a google and see if I can find something similar ............. this sort of thing

Thanks Suffs .... I would normally just slow cook with the normal veg plus a stew mix of dried lentils and barley ... just need to get carrots ;)

I also have sauerkraut (that I normally forget I have in the fridge), but will add cabbage to my shopping list too as I love this with caraway seeds :yum

I'll fight you for that skin - & yes we're definitely in a minority - The Lushly won't go anywhere near it.

I usually do a split pea soup - If they're big hocks there is usually plenty left over to go in a pasta etc. I sometimes do this Rachel Khoo recipe with beer & puy lentils which is hearty on a winters day.

i think that looks delicious Suffs especially the second one, woks of life usually reliable, I've used them as reference for a couple of things

That second Asian picture takes me back to a friend in the USA who was very much into Chinese culture. She invited a group of friends to a restaurant where she had pre arranged for us to be served something similar and there was great ceremony as it was brought to the table. It would be great to try to do it.

After all your suggestions, I chickened out and did my usual - Pressured cooked for 30 mins weg trith the vinity, plenty of soup mix and covered with ham flavoured stock.

I'm not disappointed as it tastes delicious and I can strip the bones down and make several portions of ham stew ...

I do like the look of the chinese recipe though ... just need someone to share it with to make it worth my while. :roll:
