Lol Mark I initially thought that's a bit early for Christmas forgetting that Thanksgiving is next week!
Good advice though as they always take longer than you think to defrost. :D
My bird just over 12lbs will be popped in the fridge on the evening of December 21st then boned and cooked on the 24th as I always cook it on Christmas Eve.

Morning Mark.
That's good advice. Our turkey will be delivered fresh on 23rd Dec. But I've had trouble before storing one in the shed, and it becoming frozen (in Scotland).

We haven't had a turkey for years, venturing into different meals and meats for quite some time.

But this year, will be a trad one with all the trimmings.

We get a 6kilo one which isn't so difficult to get thawed to be honest.

Oh my goodness, it takes me back to my young & single days, when a bunch of us decided to have a big Christmas dinner before going our seperate ways for actual Christmas. We bought an enormous frozen turkey, which wasn't defrosting as fast as we expected so we took it out of the fridge and put it on a surface which unfortunately was near a radiator and when it came to the day of the feast the damn turkey had gone off. Me and a couple of mates went on a mad drive around Berkshire/South Oxfordshire trying to find a turkey that wasn't frozen. We eventually tracked a one down at a local Asian supermarket but it hadn't been plucked. You should have seen us ripping those feathers out..... we did finally eat our turkey dinner but let's just say it was somewhat later than anticipated (there were also rather a lot of burnt feathers  ).

That's exactly what we said afterwards! The funny thing is that it just didn't occur to us at the time. We were so focused on an Actual Turkey that we couldn't see beyond it. :D

I don't bump into very many Pepper.

When I was at the store I worked with with a veggie. Except on thanksgiving day. She did do turkey that day . I tried to get her to try paneer with spinach ready meal.
It was a boil in bag thing and I really liked it. Of course I like sharwood tikka masala sauce.I sear some boneless chix.pour sauce on it and simmer till done, and serve it over rice.

Talk of turkey, having had both, give me fresh turkey every time. Better/different texture. Of course it needs serious resting time.I want the juice in the meat and not all in the bottom of the roasting tray.

There's just 2 of us for Christmas dinner so we don't buy a turkey.
Seafood platter again this year I think.

Family get-together doesn't feature turkey either due guests who are 1x pesce, 2 x veggie and 1x vegan.

I generally manage to squeeze one turkey dinner in each year though, and I thoroughly enjoy it.

I don't cook Christmas dinner any more (or haven't for a while anyway). I try to get a turkey crown and cook it with many of the traditional 'trimmings' to serve cold when everyone comes on Boxing Day. We have it like cold leftovers with jacket potatoes and it's become something of a tradition. It would miss cold turkey and turkey bones for soup but a large chicken will do just as well. Actually, I prefer a good large chicken, we used to like a capon - a bit of a minefield nowadays.

We haven't had turkey for Xmas for quite a few years. With just 3 of us (and the mogs), even a turkey crown is a bit much - so we are having chicken legs (and all the trimmings) instead. And they've already been in the freezer for weeks ;)

Spring ventures forth to plant the grain
And Summer dries the straw.
Autumn gathers in the harvest
And Winter shuts the door.
