I am sorry but Halloumi Cake is not fragile, it is Cypriot. I am still not certain about the sultanas, they belong in flaounes.
It is simply eaten as cake by a group of ladies sitting outside their house gossiping

If you want to try a different recipe for a savoury cake, I can point you in the direction of some that worked for me.

Might have done... but I don't dislike the flavour having used kefir, it's just that it doesn't slice but just falls apart - would evap have made any difference to that ?

I don't know. It is quite thick and might bind it all together and react with the other ingredients better. I don't really like the sound of the cake so won't be trying!

I cut a large chunk last night and blitzed it with cheese to top a cauliflower cheese .... it is now has a lovely brown crust and tastes delicious .. :yum :yum :yum :yum

I'm glad that idea worked. Blitz the rest and freeze for future use.

Although I use halloumi, I won't be making the cake, so thanks for all the warnings. It's a shame really.
